Rain, rain, go away, come again another day. I am so sick of rain it is not funny. I can’t get the yard mowed or the garden started. Canada is burning up and we can’t get a break. Momma Said, “Transfer all this wetness up there to help them out.” Hopefully, the weather will dry up soon and we can get on with spring before summer actually gets here.
The rain has brought all the flower blooms out early and they are beautiful. It seems the blooms on the dogwood and other flowering trees didn’t seem to last as long. The leaves seem to come out and the blooms were gone overnight.
The birds don’t seem to mind, they empty the feeder in a matter of hours every day. And the squirrel is getting fatter by the hour. It is soothing to watch them eat. I guess it is like watching fish swim around in a tank. The diversity of species is interesting; wrens, finches, starlings, cardinals, blue jays and doves. I want to get a hummingbird feeder up but haven’t made it that far yet.
I want to send prayers to the folks in the Midwest that are being inundated with storms and tornadoes. I have never experienced a storm of that magnitude so I can’t imagine what it is like to go through one. The devastating destruction and loss of life is a very heavy toll on the people of that area. Momma Said, I send heartfelt condolences for all the loss.”
With all this wet weather, I will leave you with a recipe from the sea this week. It is an easy one but really tasty. Enjoy!
Crab Balls
1 lb. Crabmeat
1 Egg, beaten
1 cup Ritz Crackers, crushed
1 tsp. Yellow Mustard
2 tbsp. Fresh Lemon Juice
2 tbsp. Fresh Parsley, chopped
1 tsp. Old Bay Seasoning
1 tbsp. Worcestershire Sauce
Place crabmeat in a mixing bowl, picking any stray shell fragments out. Add crushed crackers, Old Bay Seasoning & parsley to the crab. In a separate bowl, combine egg, mustard, lemon juice and Worcestershire sauce. Whip with a whisk until smooth. Pour egg mixture over the crabmeat and crackers and gently mix, careful not to break up large lumps of crabmeat. Mold into golf ball sized balls and place on a cookie sheet. Bake at 350 degrees for 30 minutes. Drizzle w/ melted butter and allow to cool.
