THOMAS – People traveling through Thomas have a new restaurant that is dishing up Southern home cooking. The Countryside Diner, located at 16001 Appalachian Highway in Parsons is serving up family style favorites like meatloaf, top sirloin roast and homemade spaghetti and meatballs.
Countryside Diner owner Robin Darlington said she opened the restaurant because there are few places to eat in the area and wanted to offer residents and those passing through a nice Christian-based place to grab a bite.
“We are doing well and excited to see the restaurant take off, especially when folks come to hike and go to the Falls,” Darlington said.
Breakfast menu selections include sausage gravy and biscuits or buckwheat pancakes. “We are serving breakfast all day now after receiving requests for it to be offered longer,” Darlington said. “I do the cooking. Everything is pretty much homemade.”
Darlington said the Countryside Diner offers homemade macaroni salad, potato salad and tossed salads. They have hot fudge sundaes for dessert and hope to soon offer homemade pies.
“I try to have a Sunday special everyone will like,” Darlington said. “One Sunday we had a pork chop special and another we offered homemade lasagna. We offer daily lunch specials.”
Darlington said she hopes folks will stop by and give them a try.
“I have been up here in the restaurant since November painting and redoing the kitchen,” Darlington said. “Lots of people have stopped and asked if we were open until we finished and opened the end of March. This is a really good spot for a restaurant.”
