Momma Said

Gran always said the weather would change when the moon changed. We got a new moon on June 5 and I sure hope something changes with it. I feel as if I need to grow fins and gills to cope with all the rain. Momma Said, “My heartfelt prayers go out to all the people in Texas who are being affected by flooding.”
I finally did manage to get the garden tilled up and beans are in the ground. I don’t think I am going to put much out this year, some hot peppers and squash along with the beans. I have so much left over from last year that I think I will take a year off.
I will probably regret this decision because I really do enjoy working in the garden, but I have just about given up on growing tomatoes. They blight on me every year and the work I put into them is not worth the effort in the end. I give most of what I can away to my family anyway so, Momma Said, “They may have to tighten the ole belt this year.”
I have a lot of projects to get completed this year so I hope the moon does change the weather for the better. I keep checking to make sure I don’t have moss growing on me because I feel as if I am moving in slow motion and time is going by at warp speed. It is hard to believe that it is already the first of June.
Momma Said, “Do what you can, when you can and the rest will take care of itself.” So if I get all my projects done that will be great and if I don’t get them done, then I guess there is always next year. Here is a recipe that I think you can get done and will enjoy.

Hasselback Chicken with
Spinach and Pepper Jack

4 chicken breasts
8oz frozen spinach (thawed and liquid wrung out)
4 pieces Pepper Jack cheese
salt/pepper to taste

Make incisions into chicken, 1/2 inches apart, being careful not to cut through the chicken
Stuff each incision with 2oz spinach and 1 piece of pepper jack, broken into pieces
Salt and pepper to taste
Bake at 350 for 30 minutes or until chicken is thoroughly cooked
