Family is a very important thing.

You have to look out for each of them in times of hardship and prosperity. It is hard to show tough love to members of your family, but sometimes it is for their own good. You have to choose a path and stick to it. Momma Said, “Hindsight is 20/20.” You want to do the right thing and sometimes you might wait just a little too long to do it. You can’t undo something bad that happens because you waited too long to act.
I hope 2017 starts out better than 2016 ended. We have lost members of our family and beloved pets, so I hope the New Year will bring some positive insight to my family and yours. A new year has the hope we need to change our lives for the better. A new outlook, so we can turn things around and live happier and at peace. Momma Said, “It is always the darkest just before the dawn.” So look forward to that next sunrise and let your future rise like the phoenix from the ashes.
We can try to help our family through the tough times, but they also have to want to help themselves. Momma Said, “Our efforts will fall short every time if the person we are trying to help refuses to accept the hand extended to them.” You can’t stop wanting to help those you love when you see them in pain, but sometimes you have to take the road less traveled, take a step back and pray that everything works out.
I hope this finds everyone in good health and all your wishes for the New Year come to fruition. Prosperity to all, God’s grace on our military men and women and on our nation as a new president takes office. I wish the best to everyone and remember to help those less fortunate.

Bacon Wrapped Cream Cheese
Stuffed Chicken Breast

Ingredients
2 Boneless skinless chicken breast
4 tablespoons cream cheese
¼ cup Pepperjack cheese, shredded
2 tablespoons green onion, chopped
4 to 8 pieces of bacon

Instructions
Cut chicken into 4 equal size pieces. Pound breast so it is about ¼” thick.
Mix together softened cream cheese, chopped green onions and shredded pepperjack cheese. Put ¼ of this mixture into the middle of each piece of chicken.
Starting at the long side, roll chicken breast up, keeping the cheese mixture to the middle.
Wrap 1 to 2 slices of bacon around the chicken breast, secure with toothpick, if needed.
Place on baking sheet and back for 30 minutes at 375 degrees F.
Broil topside for about 5 minutes to fully brown and crisp bacon. Turn each breast over and broil for another 3 minutes or so to crisp up the bottom side.
Serve immediately.

Notes
* One piece of bacon wrapped around each breast is enough. But 2 pieces of bacon for each breast fully wraps the chicken and is outstanding as well.
