I was eating a salad for lunch and as I chased an olive around the bowl, I imagined it would be a lot easier to eat them if they were square. Sometimes I amaze myself at the things I think about. I think my mind is on a different wave length or something. Momma Said, “It takes all kinds to make the world go round.”
The weather is taking another turn for this time of year. Last week in the big winds we had, I lost the roof on my back porch. The weather had turned wet and cold so I can’t get out there to tear the old off and get a new roof installed. My poor dog has to stay inside when it is going to rain because she has no where to get out of the weather. She doesn’t like staying inside so I hope I can get the roof fixed soon. There is nothing worse that a pouting dog.
Just think not quite one week left until the first day of spring. I hope March goes out like a lamb because it came in like a lion. The first day of March was the day I lost my roof in the big blow. Momma Said, “I would constitute that as a lion.” Winter wasn’t so tough and I hope we don’t get any late frost. We already have shrubs blooming and the daffodils are already in bloom. I don’t want to lose the apple trees so I hope we ease into spring.
Other parts of the country are getting horrid weather and I pray for everyone’s safety. All of us should say a prayer for our country and the safety of all first responders. They put their lives on the line everyday we owe all of them gratitude. Momma Said, “Keep them all safe and well protected.”
CRAB BOMBS
Ingredients
1 lb. Crabmeat
1 Egg, beaten
1 cup Ritz Crackers, crushed
1 tsp. Yellow Mustard
2 tbsp. Fresh Lemon Juice
2 tbsp. Fresh Parsley, chopped
1 tsp. Old Bay Seasoning
1 tbsp. Worcestershire Sauce
CRAB PUPPIES
Place crabmeat in a mixing bowl, picking any stray shell fragments out. Add crushed crackers, Old Bay Seasoning & parsley to the crab. In a separate bowl, combine egg, mustard, lemon juice and Worcestershire sauce. Whip with a whisk until smooth. Pour egg mixture over the crabmeat and crackers and gently mix careful not to break up large lumps of crabmeat. Mold into golfball sized balls and place on a cookie sheet. Bake at 350 degrees for 30 minutes. Drizzle w/ melted butter and allow to cool.
