I am going to have a tall dog. Amber is getting so leggy that I am sure she is going to be bigger than Bailey. In height, not weight. I have never had a dog big enough to stand up and snatch something off the counter. Bailey never jumped or tried to get up to the counter and Abby was not big enough. Momma Said, “This is going to be a new adventure.”
Amber is so sweet and so smart that it didn’t take long to teach her to sit and lay down. She will do anything for a piece of chicken jerky. The other night after work, I was eating my supper and both dogs started going nuts. It was an “excited about something” bark, so I go outside to see what the problem is. I kept hearing a noise that sounded like a bird, I assumed the cats had hurt a bird and the dogs could see it. I followed the noise and what do I find? Under my truck is a very, very small black kitten.
Of course with my luck what does it do when I try to pick it up but jump up into the underside of my truck. Now what do I do, I think fast and go inside and get what is left of my supper, a piece of chicken. So here I am standing on my head with a piece of chicken trying to coax this tiny thing out of my truck. Finally it sticks its head out far enough that I can grab it by the ruff and pop it out.
Of course when I get her calmed down the dogs wanted to investigate. Well let me tell you, Amber went into instant MOTHER MODE. She licked and sniffed. She even tried to crawl into the cat carrier with it. She was so excited that I could not keep her away from it. I do not know where the kitten came from but she is safe at the animal shelter now. She would make someone a wonderful pet. Momma Said, “Save an animal and adopt a friend for life.” St. Frances of Assisi, the Patron Saint for Animals, must sit on my shoulder because I have had my fair share of adventures rescuing animals. There could be worse things happen and I am just glad I can help out those creatures less fortunate.
Cheesy Chicken Alfredo Bake
INGREDIENTS
- 1 tablespoon olive oil
- 3 chicken breasts, cubed
- Salt and pepper to taste
- 4 garlic cloves, minced
- 2 ½ cups chicken broth
- 2 ½ cups heavy cream
- 1 pound uncooked penne
- 2 cups parmesan
- 2 cups mozzarella
- A handful of fresh parsley, chopped
PREPARATION
- In a pot, heat oil and add chicken. Season chicken with salt and pepper, add garlic and brown the chicken. Add broth, heavy cream, and pasta, and bring to a boil. Cover and reduce the heat to a simmer for 15-20 min.
- Turn off heat and stir in 1 ½ cups of parmesan cheese. Pour half of the pasta into a greased 11×7 inch or 9×13 inch baking dish. Sprinkle evenly with 1 cup of mozzarella cheese. Layer the remaining half of the pasta evenly on top. Sprinkle evenly with 1 cup of mozzarella and ½ cup of parmesan.
- Broil 10 – 15 minutes, or until the cheese is golden brown. Remove and sprinkle with fresh parsley.
- Serve warm and enjoy!
