It is said that bad things come in threes. We have the western part of the United States going up in flames then we have Houston, now Florida and the East coast.
There is another storm brewing in the Atlantic and I hope it is not disaster number four. One part of the country is burning up, another is under water, Momma Said, “How much more can we take?”
We live in a part of the country that seldom sees any natural disasters. We don’t have hurricanes or earth quakes but we get our share of water and snow. The streams and rivers have been flooded so many times in the recent past that they are so washed out they won’t hold water like they used to. Some have even changed course and run where they never did before.
We have so much different weather now than when I was growing up. We didn’t have 90 and 100 degree heat in the summer and these crazy rain storms we are having. Torrential downpours with five or six inches of rain in the span of a few hours were unheard of. One season blended in with the next. Today it is summer one day and winter the next.
I have said it before and I will say it again, “I miss the good ole days.” Slower, simpler times and closer relationships with people, today, if you can get someone to talk to you is saying something. The harder part is getting them to take their nose out of the device they are holding in their hand and even look at you. Momma Said, “I miss my Mommy!”
Old Fashioned Cracker Candy
1 tube of saltines (40 crackers +)
1 cup (2 sticks) butter (do not use margarine)
1 cup + 2 Tbsp. firmly packed light brown sugar
1 bag semi-sweet chocolate chips
1/2 to 3/4 cup toasted chopped pecans or almonds
Instructions:
Preheat oven to 350 degrees. Line cookie sheet with foil & spray with non-stick cooking spray. Line crackers end to end on sheet, breaking crackers to fit the end if necessary. In a saucepan, melt butter on low heat. Once melted, add brown sugar and turn heat to medium. Continue stirring until boiling – then boil for 3 minutes (set timer). Pour over crackers, spread evenly working quickly. Put sheet into oven – bake for 5 minutes. Remove – pour chocolate chips over top – place a sheet of foil over and let melt for 3 minutes. Spread melted chocolate over the top evenly. Add nuts to top – replace foil and refrigerate until set. Break up into pieces.
