Noooooooooooo! On my way to work the other morning I passed a Department of Highways truck with a snow plow on it already. The weather has been so unseasonably warm lately so it is hard to think of snow. It won’t be long though before we will see the nasty white stuff. I don’t know where this year has gone. Momma Said, “Time flies when you are having fun, but I don’t remember having that much fun this year that time would go so fast.”
This year has seen a lot of devastation. With floods, hurricanes, forest fires and now a mass shooting. With nature being unpredictable there is no blame to assign for a disaster. But the shooting in Las Vegas was uncalled for. One person taking the lives of so many is just an act of insane violence.
We here at the Parsons Advocate want to send heartfelt condolences to all who were affected by this senseless act of cruelty. Momma Said, “Our hearts go out to the families who lost loved ones and to those who were injured.” This is another tragedy that our country will have to endure and come through all the stronger for it.
Beef Mac and Cheese

1(16 ounce) bag of large elbow macaroni
- 2 tablespoons vegetable oil
- 2 cups chopped green bell peppers
- 2 cups chopped onions
- 1 tablespoon chopped garlic
- 2 lbs lean ground beef
- 3 cups canned crushed tomatoes
- salt and pepper
- dried basil
- ground cumin
- dried oregano
- 2 -3 cups shredded cheddar cheese
DIRECTIONS
- Heat the oven to 350 degrees.
- Cook the macaroni according to package directions; drain and set aside.
- Heat the oil in a skillet; add the peppers, onion, and garlic, and sauté until soft.
- Add the ground beef and sauté until browned.
- Add the tomatoes, salt and pepper to taste, and the basil, cumin and oregano.
- In a large bowl, combine the macaroni and the beef mixture.
- Spread this mixture into a 9X13-inch baking dish. Top with the cheese and bake for 20 to 25 minutes, or until the cheese is lightly browned and bubbly.
- Note: can use ground turkey or chicken in place of beef.
