Thanksgiving has come and gone and so has “BLACK FRIDAY.” I don’t think people even enjoy Thanksgiving dinner anymore for fear of being late to the mall. Momma Said, “OMG, how badly do you need something to fight crowds like that?” I have never been Black Friday shopping and I don’t ever plan to go. I have a panic attack just thinking about those hordes of people.
You would think with all the people doing online shopping that there wouldn’t be anyone left to go to the stores, but I guess there are diehards that enjoy the mayhem. Fist fights and hair pulling is not my idea of shopping.
I have trouble just going to the store to buy dog food I don’t think I would last long in that mob. Good luck to anyone braving the storm but it is not for me. I even try to get Christmas shopping done in the summer so I don’t have to do anything but go to the store to buy groceries near the holidays. Momma Said, “If it wasn’t for starving to death I wouldn’t even shop for groceries at that time of year.” Shop till you drop is not in my vocabulary.
We are still having decent weather here in West Virginia, so get the grill fired up and try this recipe.
GRILLED MIXED BERRY COBBLER
INGREDIENTS
Servings: 10
2 cans biscuit dough
½ cup sugar
½ cup flour
½ tablespoon cinnamon
¼ teaspoon salt
1½ cups blueberries
1½ cups strawberries
1½ cups blackberries
1½ cups raspberries
½ cup sugar
3 tablespoons cornstarch
Ice cream, for topping
PREPARATION
- Cut biscuits into small, even pieces (about 9 per biscuit) and place in a bowl.
- Sprinkle sugar, flour, cinnamon, and salt over the dough bites. Mix well.
- On the grill, using a disposable foil pan or grill-proof pan, combine blueberries, strawberries, blackberries, raspberries, sugar, and cornstarch. Stir well and let cook until fruit starts to release its juices.
- Cover fruit with the cinnamon sugar–coated biscuit dough in as even a layer as possible.
- Cover pan tightly with foil and close the grill. Keeping the temperature at 350˚F/175˚C, grill for 20 minutes.
- Take the foil off the pan and close grill again for 10 more minutes or until dough is cooked through and golden brown. (Times and temperatures may vary based on grill.)
- Remove from the grill & serve with a scoop of ice cream.
