The first issue of 2018, it is hard to believe that time has progressed so fast. Why does it seem like I was a teenager just months ago? Momma Said, “Time flies when you are having fun.” But it is no fun anymore waking up with aches and pains and joints that don’t want to work properly. I liked it much better when I woke up and actually felt like I had a good nights sleep.
It is said that with age comes wisdom, so why don’t I feel any smarter? I just keep getting older and dumber. My brain just doesn’t want to function on the right level when it comes to this new technology. My TV went on the fritz just before Christmas so I had to buy a new one. I had myself in a frenzy trying to remember how to hook all the wires back up. I was in a tizzy over nothing all I had to do was plug it in.
The purchase went better than I expected. I went to the store on the 23rd of December and they were all but sold out. The one I wanted was sold out but I got a bigger set for less money. It was marked the same price as the one I wanted but when the guy rang it up it was $30 cheaper than the ticket price. Momma Said, “Sometimes you fall in it and end up smelling like a rose.” That doesn’t usually happen to me so I will take this as a win.
I hope everyone had a good Christmas and a happy New Year’s celebration. I never seem to be able to stay awake for the ball to drop and herald in the New Year. So as usual, I slept through it again this year. It is still hard to believe that it is the year 2018. To be here now and see how far things have come since I was 11 or 12 years old is astonishing. It is hard to believe that I have lived through six decades of change. Momma Said, “Young people today view the 50’s and 60’s as ancient history and I see it as if it was yesterday.”
SLOW COOKER HONEY GARLIC CHICKEN AND VEGGIES
INGREDIENTS:
- 8 bone-in, skin-on chicken thighs
- 16 ounces baby red potatoes, halved
- 16 ounces baby carrots
- 16 ounces green beans, trimmed
- 2 tablespoons chopped fresh parsley leaves
FOR THE SAUCE
- 1/2 cup reduced sodium soy sauce
- 1/2 cup honey
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon ground black pepper
DIRECTIONS:
- In a large bowl, combine soy sauce, honey, ketchup, garlic, basil, oregano, red pepper flakes and pepper.
- Place chicken thighs, potatoes, carrots and soy sauce mixture into a 6-qt slow cooker. Cover and cook on low heat for 7-8 hours or high for 3-4 hours, basting every hour. Add green beans during the last 30 minutes of cooking time.
- OPTIONAL: Preheat oven to broil. Place chicken thighs onto a baking sheet, skin side up, and broil until crisp, about 3-4 minutes.
- Serve chicken immediately with potatoes, carrots and green beans, garnished with parsley, if desired.
