Another month is gone and all we have to show for it is a lot of mud.  This has really been a wet spring and I hope it doesn’t carry over to summer.


It has been a hassle trying to get the yard mowed or doing anything outside.  I did get a little yard work done last weekend and it looks pretty good.  Momma Said, “Put out a little hard work and the benefits are worth it.”

I am in the process of rescuing another stray.  There is a gray tomcat that has been coming around the office and he is in pretty bad shape.  I have talked to the animal shelter about their catch and release neuter program and I hope I can get him in for some help.  He was a little skittish at first but he is coming around. Momma Said, “All truth will come to light when I try to get him in a pet carrier.”

I hope they can help him get a little healthier and it will also rid the community of a lot of unwanted babies.  That is something we do not need, so I hope help is on the way.  The shelter is an amazing organization that helps the community in so many ways.  It is a good charity to donate to and the work they do is beneficial to all.

It is also a good place to search for your new pet because all the animals at the shelter deserve a second chance.  Some of them have been through horrible things that they did not deserve and giving them a loving home is all they want. Momma Said, “If you are about to start a search for a new pet, start at the shelter and save a life.”


Cowboy Cookies

YIELD: 2 DOZEN

TOTAL TIME: 30 MINUTES

Ingredients:

  • 1 & 1/2 cups quick cooking oats
  • 1 & 1/2 cups semi-sweet chocolate chips
  • 3/4 cup shredded coconut flakes
  • 1 cup chopped pecans
  • 1 & 1/2 cups all purpose flour
  • 1 & 1/2 tsp baking powder
  • 1 & 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup butter, softened (1 & 1/2 sticks)
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1/2 tbsp vanilla extract

Directions:

  1. Preheat the oven to 350º F. In a smaller mixing bowl, combine the mix-is – the quick cooking oats, chocolate chips, shredded coconut and chopped pecans. Set aside.
  2. In a separate smaller mixing bowl, combine the flour, baking powder, baking soda, and salt.
  3. In a mixing bowl, beat the butter, sugar, and brown sugar with an electric mixer for 1-2 minutes, until fluffy. Add in the eggs and vanilla extract.
  4. Add the flour mixture to the creamed mixture, mixing with a spatula just until there are small flour streaks left – it’s okay if the batter has clumps!
  5. Reserve 1 cup of the mix-ins, mix the rest into the batter. Use a cookie scoop to form dough balls, rolling the balls in the reserved mix-ins and pressing the mix-ins in slightly.
  6. Place the cookies onto a lined baking sheet and bake for 12-14 minutes or until the edges are set. Allow the cookies to cool on the sheet for 10 minutes before moving to a cooling rack.
