I am going to my first ever Renaissance Festival this coming weekend and I am getting excited. A couple in Lewisburg have over 300 hundred acres that they have been transforming into another realm. They have jousting, food vendors, leather artisans, and other crafters showing off their talents. Each weekend in June they have a different theme and I am going to be going as a pirate. I don’t know what to expect when I get there but I am hoping to have a fun day. Momma Said, “Broaden your horizons and try new things.”
I want to see the horses during the jousting tournaments. That has always fascinated me to watch the timing of the actual act of jousting. The horse has to do its job, the knight must protect himself and at the same time try to unseat his opponent. And that has got to hurt when you get hit with the lance. I don’t think I want to try that. It is going to be an experience and I hope the weather is nice.
I think Mom would have enjoyed something like this she loved anything done outdoors. She hated to be indoors when the weather was nice. I am a lot like her in that regard I hate to be indoors. I feel like I am suffocating when inside on a beautiful day. I try to find something to do just to be outdoors. So I hope this weekend has good weather and the fair is successful. I feel bad for people when it basically rains on their parade so to speak.
I have put a lot of thought in my costume and had help from my sister. We shopped and found the perfect outfit to make my trip a success. I am going to try and fool my brother and see if I can pass by him and he doesn’t recognize me. He lives in the Lewisburg area and has gone to the fair before, so I hope I can fool him. Momma Said, “Now you see me, now you don’t”
Easy Corn Fritters
Ingredients
- 2 cups self-raising flour
- 4 eggs
- 2/3 cup full cream milk
- 26.5oz canned or frozen corn
- 1/2 bunch chives, finely chopped
- 1/2 bunch coriander, finely chopped
- 1 shallot, finely chopped
- Butter and extra virgin olive oil (to coat the base of the pan when frying)
- 2 tsp Salt and 1 tsp pepper
DIRECTIONS
Sift the self-raising flour (alternatively you can use plain flour and baking powder) into your mixing bowl.
Whisk eggs and milk in a smaller bowl and pour gradually into the center of the bowl that is holding the flour. Stir to combine.
Gently mix in corn, chives, coriander, shallots, and salt and pepper.
Turn stove on to medium heat. Use just enough butter and olive oil to generously coat the bottom of your pan.
Place large heaped tablespoons of mixture into your pan, cook for approximately 2 minutes on each side or until golden color is achieved.
Cook in batches making sure to add butter and olive oil to the pan before each round.
Serve with your choice of accompaniments – bacon, smoked salmon, avocado, eggs, and all make great combinations!
