Running out of toilet paper is not one of mine biggest concerns, after all I work in a newspaper office, get it?  My bigger worries are not getting to go to my chiropractor every week and not being able to get my hair cut each month.  I have fibromyalgia and arthritis and my weekly appointments help me cope with the pain.  The hair thing has been my Achilles Heel since I was a small child, I can’t stand for my hair to get down and rub on the back of my neck.

I guess those are small things to complain about but in my world they are big fish to fry.  I can get by with the hair thing but the constant pain I live with is almost unbearable.  I know a lot of people think chiropractors are not real doctors but they help a lot more than a pill for this and a pill for that.  When mind and body are as one your world is more in harmony than ever.  If you are in pain you can’t think coherently or get adequate sleep.  Momma Said, “Don’t poke the grumpy bear.”  And that is how I feel when I am in pain.

This virus has the whole world in turmoil and I hope we can turn around after this.  The economy is in shambles and I don’t know where the government is coming up with all this surplus money.  How are we covering this influx of cash that is going out to Americans as unemployment and stimulus money?  I think this is going to have an impact on our country for years to come.

Children and young people are going to grow up without the freedoms I had as a child.  No longer getting to go to the parks and play for fear of getting sick.  It is almost like dealing with nuclear fallout.  We may grow into a society of introverts, afraid to interact with people and becoming shut-ins.  A lot of people already have their local stores doing their shopping and delivering to their car or home along with shopping online.  Also, this is a Census year so with all the deaths happening how is that going to impact their studies.  And my conspiracy theory for this week, with all the unattended deaths, this is a good way to disappear if you are on the lamb with the law, buried in a mass grave with all unclaimed bodies like I saw on the news, just put your ID on a body and viola’ you are gone.


Fresh Strawberry Muffins

Ingredients :

1/2 cup butter, softened

3/4 cup sugar

1 egg…

2 cups flour

2 tsp baking powder

1/2 tsp salt

1/2 cup milk

1/2 tsp vanilla

1 1/2 cups chopped strawberries

3 tsp sugar

1/2 tsp cinnamon

Directions :

Cream butter and sugar then add egg and mix well.

Sift flour, baking powder, and salt in a small bowl. Add flour mixture and milk alternately to butter mixture then add vanilla. Gently stir in strawberries and spoon batter into muffin pans.

Combine sugar and cinnamon and sprinkle over muffins.

Bake at 400º for 20-25 minutes, makes one dozen muffins.
