Time has a way of sneaking up on you and it passes by so fast that in a blink of an eye it is the end of another year. Well, 2020 can go down in the books as the most screwed up year of all time. We have had Covid-19, tornados, hurricanes, fires, floods and I can’t wait to see what winter has in store. Momma Said, “Everyone always saves the best for last.” And I don’t know which way the best is going to be, better or worse.
None of us has experienced a year like this in our lifetime and I am ready for it to be over. I hope the vaccine works and we can get a handle on this monster. The U.S. has reported over I million cases in just one week and I have no estimate on the world population. I don’t know how the essential workers in the health industry can keep going. There are going to be so many cases of PTSD just as in a war zone.
I still see people going about their business without wearing a mask and I don’t understand why they would put themselves in peril. I see mothers holding their children’s hand to keep them safe crossing the street but neither of them are wearing a mask. Why not think of your children? Momma Said, “Children learn by example so why not set a good one.”
Mashed Potato Bacon Bombs
Ingredients
- 2 cups leftover and chilled Mashed Potatoes
- Bacon..one slice per Bomb
- 1 Egg
- 1/2 cup Dry Bread Crumbs
- Cheddar Cheese cut into 1″ chunks (one chunk per Bomb)
- Salt and Pepper to taste
- Skewers or toothpicks
- Oil for frying‾ I used Canola
- Sour Cream and toppings for dipping
Preparation Instructions
- In a large bowl combine the Mashed Potatoes, Egg, and salt and pepper until well blended.
- Grab a small scoop of the Mashed Potatoes and gently form it around a Cheddar Chunk wrap in a slice of bacon and place on skewer.
- Place the Bread Crumbs into a shallow bowl, and roll evenly in the Bread Crumbs. Deep Fry them in the oil (350 degrees, until they’re evenly golden…
- Let them drain on some paper towel.
- Serve them with Sour Cream, and serve warm so they explode!
