It is really hard to believe that it is only a few weeks until Christmas. This has been such a crazy year and I know it is bad to wish your days away but I will be glad to see 2020 just go away. I am hoping 2021 will usher in a new breath of life and we can get a handle on this virus. We had some luck with not having many cases in this area but now we have an increase in positive cases.
I just want to crawl in a hole and hide until everything is back to a semblance of normal, but I don’t see that happening anytime soon. Just like everything in life it must run its course and hopefully it will be contained and eliminated. Momma Said, “Hope is the strongest medicine of all.” I am sure we will have a spike in cases after the Thanksgiving travel but I am not going anywhere.
Christmas is going to be a change for people this year and I hope the best for everyone, but maybe the best case scenario is just stay home and contact with friends and family via the computer. We have to get a handle on this monster and the best way to do that is to starve it to death. If it doesn’t have a host it can’t survive so please take precautions and we can beat this crisis.

3 Minute Fudge
INGREDIENTS
- 1 can Sweetened Condensed milk (14 ounces)
- 2 cups (1 12 ounce bag) semi-sweet chocolate chips (can substitute white chocolate chips or chocolate mint)
- 1 teaspoon vanilla extract
INSTRUCTIONS
- Butter a square pan and line with parchment paper for easy removal of set fudge. Set aside.
- In a microwave safe 2 quart bowl, heat chocolate chips and sweetened condensed milk, on high for 1 minute. Remove from microwave. Let sit for 1 minute then stir to combine. If needed, heat an additional 30 seconds. Stir until chips are completely melted and chocolate is smooth.
- Stir in vanilla extract. Pour fudge into prepared pan. Let fudge cool completely before cutting into 1 inch squares. (you can place in the refrigerator for 1 hour to speed up the process.)
- Store in an airtight container. Fudge does not need to be kept refrigerated.
NOTES
This is a soft fudge but some readers have asked for tips to make sure it sets properly.
1) Did you use sweetened condensed milk or evaporated milk? Evaporated milk DOES NOT WORK for this recipe. This is the number 1 mistake in this recipe.
2) If you used sweetened condensed milk and it’s still too soft, you can either store it in the refrigerator or add an additional 1/4 cup chocolate chips the next time you make it.
3) One reader stated that using a metal spoon (as opposed to a wooden spoon or spatula) helped her fudge set. Not sure why that works but you can give that a try too.
