Almost Heaven West Virginia! That is what the skiers are saying after this week’s winter storms. We have had more snow this month than we have had in the last three winters combined. I had a customer tell me that there was two feet of snow in some places in Davis and Canaan. Momma Said, “That is just what the doctor ordered for all ski buffs.”
Personally all that matters to me is that there is snow on the ground and not mud. The skiers can keep the slopes and I will be happy for it. I tried skiing one time and it was not my cup of tea as they say. I love to water ski but I just could not get the hang of snow skiing. I will be the one sitting by the fire sipping cocoa.
I don’t mind to drive in the snow because I know what I am doing. It is the other people on the road that scare me. Driving too fast for conditions and just doing dumb stuff when behind the wheel. I will give kudos to our state road department because they work tirelessly night and day to keep the roads passable. My dad used to work driving the snow plow in the winter time and he always had the night shift. I was very young and I thought it was so scary to work all night.
I couldn’t do a night shift job because I could not stay awake. I am not a night owl. My time clock shuts off at 11 p.m. and that is the end of me for the day. Momma Said, “Really glad I am not a vampire!” I like the sunshine way too much to have to sleep all day after a hard night of work.
Deep Dish Bacon and Vegetable Quiche
PASTRY:
- 2 cups plain flour
- 1/2 cup vegetable oil
- 1/2 cup milk
- Pinch of salt
- 1 Tbsp. breadcrumbs
- FOR THE FILLING
- 8 eggs (beaten)
- 1 cup of milk
- 1 cup of cream
- 8 button mushrooms (sliced)
- 1 brown onion (diced)
- 4 slices of bacon, lightly cooked and diced
- 1/2 Red Capsicum/Bell popper
- 1 cup (chopped) broccoli florets
- 1 cup of Tasty Cheese (grated)
- Salt and pepper to season
Directions
In a large bowl, add flour, milk, oil, breadcrumbs, and salt. Mix to combine.
Turn out onto a lightly floured board. Work until well incorporated and a smooth dough forms. Work into a ball, wrap in cling wrap/plastic, and chill in the fridge for 30 minutes.
Place dough in between two sheets of baking paper, using a heavy-based pot press down to flatten the dough as much as you can. Using a rolling pin, roll out until you have a 16” circle
This will fit an 8” spring form pan.
Once rolled, fit pastry to your lightly greased springform pan. Pressing gently so you don’t tear it.
Cutaway any excess. Prick the base in 3-4 places with a fork. Place in the refrigerator for an hour or until you are ready to cook.
Bacon And Vegetable Quiche Filling
Pre-heat oven to 180C/350F
Beat eggs with milk and cream until well incorporated. Season with salt and pepper? Add filling ingredients and gently stir to combine. Pour into your unbaked shell.
Bake for 20-30 minutes then reduce heat to 160C/320F
And bake a further 60 minutes or until filling is cooked. The filling is cooked when a skewer is inserted and comes out clean.
Remove from oven and leave to sit for 10 minutes before removing from pan. Serve hot or cold
