The gas prices in this country are like a yo-yo, up one day, down the next. I am sure I have mentioned before that in my part of town there are five gas stations within rock throwing distance of each other. Three of those five have other stations on the other end of town which can’t be more than two miles apart.
On my way to work I have to pass all five on my end of town. The prices will mostly be comparable among them but lately all have stepped out of the box I guess. We have prices ranging from $2.99 to $3.65 and they can look out the window and see each other’s prices. The thing I cannot understand is people still buying gas at the higher price. Momma Said, “Why pay 66 cents more for a gallon of gas?”
Maybe they don’t want to shop at a particular store but why pay the higher price? I know people have principals they want to uphold but as you may well have guessed by now the lower price is Wal-Mart. I know they have the power to buy in bulk but why must the prices be such a huge difference? The world is in a state of turmoil right now and we the people are getting the short end of the stick so to speak.
Russia is killing Ukrainian people left and right, six year old kids bringing guns to school, politicians paying hit men to shoot up the houses of people after an election, secret documents being found in homes and offices of our elected officials, rockets going into space carrying more satellites to probably spy on us. (FYI, just remember how the movie Terminator started out.) Momma Said, “I am still ready to pack my bags and move to Mars.”
Three Ingredient Sponge Cake
Ingredients
- 3 eggs (separated into whites and yolks)
- 6 Tablespoons of granulated sugar (divided in half)
- 3 Tablespoons cake flour
Decorations (optional)
- whipped cream
- strawberries
- chocolate drizzle
Directions
Separate 3 eggs into a medium bowl. Put the egg whites in a small bowl and the egg yolks in a large bowl.
Whip egg whites with a mixer starting at low speed and gradually increasing to high speed. Once the mixture is light consistency, add 3 tablespoons of granulated sugar.
Continuously beat for 3-5 minutes until glossy and stiff peaks form.
Beat egg yolks until broken up, add 3 tablespoons of granulated sugar until it becomes a light yellow color.
Baking Instructions
Sift in 3 tablespoons of cake powder. Mix until well combined, folding in the flour. A spatula works best.
Add in meringue, fold it in by scooping and folding one third at a time. The Batter should be nice and smooth.
Line a 5-inch (12cm) cake pan with parchment paper sides and bottom. Fill up with batter. Give a shake and tap to remove air bubbles.
Bake at 320F or 160C for 20-25 minutes or until a toothpick comes out clean.
Set on a cooling rack. Once cooled, remove parchment paper carefully.
Start slicing layers evenly.
