I cannot believe how fast time is flying by this spring it seems as if we are in a time warp or something. I’ve always heard that time goes faster the older you get but if it goes any faster it will be going backward. Momma Said, “In some aspects, that might not be a bad thing.”
When we were in grade school, which was right across from our house, the last week of May was our big school picnic. The whole community would make food and we would have a big spread in the shade on the school playground. It was such a big event because that meant we only had one week of school left.
We never got snow days so we always had an early out for summer.
It meant playing all day, of course after we got our chores done. We each had something we had to do like help mow grass. And in those days, we didn’t have a weed-eater. We had a long pair of shears, like scissors, that were hand operated. We had to cut everything that mom couldn’t mow.
We did mostly outside chores but when the indoor chores came around, I hated it. I always had to dust and mom had so many knick- knacks sitting around that it was tiresome. I just didn’t like being indoors. We didn’t have air conditioning and I really liked to have the windows open, especially at night. The sounds of nature would woo me to sleep. Momma Said, “The best way to go to sleep is to be tired from a hard day’s work.”
Crockpot Mac and Cheese
Ingredients
• Cooking spray
• 8 ounces elbow macaroni, uncooked
• 1 (12-ounce) can evaporated milk
• 2 1/2 cups whole milk
• 1/4 cup butter, melted (1/2 stick)
• 2 (10-ounce) bricks sharp Cheddar cheese, grated (about 5 cups)
• 1 tsp salt
• Dash pepper
• Dash paprika
• 3 egg yolks, optional
Instructions
• Spray the crockpot with cooking spray.
• Add the macaroni, evaporated milk, milk, butter, salt, pepper, and all but 1/2 cup of the grated cheese. Mix in the egg yolks, if using, and stir until well combined.
• Spread the left-over cheese on top and sprinkle with paprika.
• Cover and cook on low for 2 hours. Check the pasta and stir everything well. Depending on the size of the crockpot, it may be ready to serve. If not, cook for another 30-60 minutes.
• Stir, serve hot, and enjoy!
