Another week, more foggy mornings, I hate to think that this ole wives’ tale will come true but we will have to wait and see. I will continue to write my column if I can make it through all the snow that is being predicted by these foggy mornings. Even the weather forecasters are predicting heavy snow and cold this winter. Momma Said, “Keep the home fires burning, wish me luck and stock up the bread and toilet paper.”

I do believe in a lot of these old sayings and I respect the people who came before me. They had it hard and the only way they had to mark the seasons was to keep track of what happened the year before. It made planting and harvesting a lot easier for them because they didn’t have Door-dash and Ubers to help them in time of need.

They had to prepare for anything to happen because all they had were themselves to depend on. If you didn’t have your food stocks and firewood prepared you could and probably would die. They had to find foods that would last in a cellar or some type of preservation until Spring arrived.

You look at the world in a whole new light when you know if you don’t prepare you could die. It is still prevalent today and I really do hope the day doesn’t come that this will be put to the test. The world is not in good shape today and who is to say that it will not get worse.

Garlic Butter Cabbage

1 medium sized cabbage

4 tbsp. butter unsalted

2 tbsp. minced garlic

3/4 cup chicken broth

1 cup heavy cream

1 cup grated parmesan

Seasonings:

2 tsp. onion powder

2 tsp. Italian seasoning

Salt and pepper to taste

Directions:

Preheat oven to 350 degrees. Slice the cabbage into wedges and lay in a baking dish. In a pan, melt the butter over medium heat. Add the garlic and cook for about 1 minute. Pour in the chicken broth, heavy cream, parmesan and all the seasonings. Stir constantly and let simmer for 3 to 5 minutes. Once it has started to thicken, pour over the cabbage. Bake for 55 to 60 minutes. The cabbage should turn a golden brown on top. Wait 10 minutes before serving to allow the sauce to thicken more.
