We have an ongoing problem not only in our area but across the US concerning Elder Abuse. The health care industry is so overtaxed that number one we can’t keep enough staff on duty and number two, finding qualified individuals to do the work.

Back in the day, elders were not shipped off to institutions for someone else to take care of, they were taken care of in the home, but then we did not need five jobs to keep our heads above water. The wife didn’t have an outside job, her jobs consisted of housekeeping, child care and looking after the elders of the family. Momma Said, “Not bashing the wife, her hands were full with everything on her plate.”

The husband was considered the bread winner and the wife was the Queen of the Household. Her jobs were just as, if not more, important than the husband. In today’s society, things are a lot different, not to mention more expensive. But that does not excuse the abuse and suffering of our elders.

Long-term facilities for care of our elders does not mean it has to be sub-standard by any means. Some of the people that work in these facilities are not as sympathetic as they need to be. Momma Said, “Just because they are old does not mean they don’t have feelings.” They are stuck, intimidated, ignored and abused. There are a lot of patients that are there just because of a physical inability not a mental one and it is not like the institutions are not getting paid enough, far from that. The price far exceeds the care that is provided in some places.

Crabbies

Ingredients:

1 stick of butter, softened

1 (6-ounce) jar cheese spread (i.e. Kraft Old English Cheese)

1 1⁄2 teaspoons mayonnaise

1⁄2 teaspoon garlic salt or garlic powder

1⁄2 teaspoon salt

1 (8-ounce) can lump crabmeat, drained

6 English muffins, split

Directions:

If you’re serving right away, preheat the oven to 350 degrees Fahrenheit.

In a large bowl, beat together the softened butter, cheese spread, mayonnaise, garlic salt, and salt at medium speed until well-combined. Gently toss in the crabmeat with a fork.

Spread the mixture on top of the muffins, yielding 12 crabbies total.

For make-ahead instructions, skip to the next step. If you’re serving them right away, place the crabbies on a baking sheet and bake for 10 minutes, or until bubbly and crisp. Serve and enjoy!

Make-Ahead Directions:

Place the sliced muffins on a baking sheet. Freeze them for 1-2 hours, or until frozen solid.

Transfer the crabbies into freezer-safe bags, squeezing out as much air as you can to prevent freezer burn. Freeze until ready to use.

To reheat, place the crabbies on a baking sheet. Bake for 12 to 15 minutes at 350 degrees Fahrenheit or broil for 5 minutes, or until crispy and bubbly.
