Cranberry Bliss Bars

INGREDIENTS

FOR THE BARS

  • 1 cup (2 sticks) butter, melted
  • 1 1⁄2 cups brown sugar
  • 2 eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1⁄2 teaspoon salt
  • 1 cup white chocolate chips
  • 3⁄4 cup dried cranberries, roughly chopped

FOR THE FROSTING AND TOPPING

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1⁄2 teaspoon vanilla extract
  • 1⁄3 cup dried cranberries, chopped
  • 1⁄2 cup white chocolate, melted for drizzling

 

 

INSTRUCTIONS

  • Preheat the oven to 350 degrees Fahrenheit. Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides.
  • In a large bowl, beat the melted butter and brown sugar until combined. Whisk in the eggs and vanilla until smooth.
  • Sift the flour, baking powder, and salt in a separate bowl. Add the dry ingredients to the wet ingredients and mix until just combined. Do not over mix. Fold in the white chocolate chips and cranberries.
  • Spread the batter evenly into the prepared pan. Bake for 20-22 minutes or until a toothpick inserted in the center comes out clean. Allow the bars to cool completely in the pan.
  • Make the frosting: In a medium bowl, beat the cream cheese with an electric mixer until smooth. Add the powdered sugar and vanilla and beat until light and fluffy.
  • Spread the frosting evenly over the cooled bars. Top them with cranberries and drizzle with melted white chocolate. Lift the bars out of the pan using the overhang. Cut them into 24 squares.
