Bethany’s Cakes and Cupcakes Comes to Parsons

A venue to pacify Parson’s sweet tooth has opened on First Street.  Parsons native Bethany Pennington opened Bethany’s Cakes and Cupcakes LLC to rousing success.

According to Pennington, she started her baking business three years ago as a hobby after she had trouble finding someone local to bake her daughter’s birthday cake.  In the years since, her business has grown which is what lead to her decision to open the Parsons location.   “We just like being here,” Pennington said.

Pennington said she has sold out of what is in the case almost every day since she opened the doors.  Pennington also said she had anticipated a slow down in business after the first of the year due to the end of the holiday season, but this has not been the case.  However, Pennington did point out that any leftovers they do have, they donate locally.

The bakery offers low carb, gluten free and custom orders.  For mix and match orders from the bakery case, Pennington says she asks for two days notice with birthday cakes requiring one to two weeks.  According to Pennington, January and February cake orders are already booked full.

Along with her selection of baked goods, Pennington offers breakfast and lunch specials such as breakfast burritos, biscuits and gravy and BBQ sandwiches.  

Pennington runs the shop along with her mother.  Due to the demand at her shop, she has also taken on one employee.  “I just couldn’t do it all,” Pennington said.  

Bethany’s Cakes and Cupcakes LLC is open Tuesday and Thursday from 7:30 a.m. to 1:30 p.m. and Saturdays from 9 a.m. to 1 p.m.  Mondays, Wednesdays and Fridays are pre-order days, according to Pennington.  The shop is located at 337 First Street in Parsons and can be contacted either by phone at 304-614-8449 or through the company’s Facebook page and messenger.
