We will soon have to turn the clocks back one hour and I do not like it. It is still dark when I get up to go to work and it is dark by the time I get home. I don’t know how the people in Alaska do it. Sure it is great in the summertime having close to 24 hours of daylight, but to have 20 hours of darkness in the winter would be soooo depressing.
So much for that right now I have more on “The Dog That Just Keeps Costing Me Money!” Yes an update on Raven and her latest endeavors. I have a spare pair of glasses that I keep on my desk and I left her in the room for not more than ten minutes. I came back in and she had destroyed my glasses. Yes they are beyond repair, so more money down the drain.
I think she has separation anxiety she doesn’t do things like this all the time so she catches me off guard when she does. I should be like the singer Prince when he changed his name to whatever that symbol was and change her name to $. Momma Said, “I guess if I had a human child I would be spending money on braces so I guess it is tit for tat.”
We are having some nice weather here but we still need rain desperately. I just hope the weather doesn’t turn bad too quickly because with all the leaves still on it would be a disaster. If we get an early significant snow fall we will have trees down everywhere. Let’s just hope that doesn’t happen.
Apple Pie Dip
Ingredients
- 3 apples, peeled and diced into 1/4 inch cubes
- 1/2 tbsp. lemon juice
- 1/3 cup brown sugar
- 2 tbsp. sugar
- 1/2 tsp. cinnamon
- 1 pinch salt
- 1 cup water
- 3 tbsp. cornstarch
Instructions
- Toss the peeled and diced apples together with the lemon juice. Set aside.
- Combine the brown sugar, sugar, cinnamon, salt and water together in a pot.
- Place the apples into the liquid.
- Simmer the mixture for approximately 10 minutes or until fork tender.
- Remove about 1/2 cup of liquid from the pot and whisk in the cornstarch.
- Pour the cornstarch slurry into the pot with the apples and stir until the sauce has thickened.
- Use right away, refrigerate for 5 days or freeze until needed!
- Eat with pita chips, pretzels or whatever you choose.
