The country has a new president and I am so glad it is done. The political ads on TV drive me nuts with a candidate being a good guy in one commercial and the next he is lower than dirt. Momma Said, “Everyone has their own opinion that is what the election is for.”
I did my civic duty and voted as a good American should and I also did my duty as a Furbaby mama and got Raven spayed this week. She is doing very well with recovery and I hope the country can do as well. Recovery will long and slow but I do hope things turn around for the better.
Our weather here in Wild Wonderful West Virginia has been absolutely fantastic lately. Most of the leaves came down last week and the skies have been blue and the temperature has been in the 60’s and 70’s, with hardly any humidity. A typical fall scenario for the Mountain State, which I must say we have not had for some years.
The last few years it has started raining and not stopped until it was time to snow. I will say we could use some much needed rain to end the drought I just hope it doesn’t make it up in snowfall amounts this winter. If the snow is spread out over the duration of winter it won’t be so bad. Momma Said, “Suck it up Buttercup you will get what you get and there is no changing that.”
Mandarin Orange Fluff
Ingredients
- 1 3 oz. box orange jello mix
- 1 cup boiling water
- ½ cup cold water
- 1 3.4 oz. box instant vanilla pudding
- 8 oz. cool whip
- 2 cups mini marshmallows
- 2 15 oz. cans mandarin oranges, drained very well
- 1 20 oz. can crushed pineapple, drained very well
Instructions
- In a large mixing bowl combine the orange jello mix and boiling water, whisk until dissolved. Pour in the cold water, whisk to combine. Place the bowl in the refrigerator for 15 minutes.
- Remove the bowl from the fridge and whisk in the instant vanilla pudding mix, scraping down the sides to incorporate everything. Return the bowl to the refrigerator for 15 minutes.
- Remove the bowl from the fridge and fold in the cool whip.
- Add in the mini marshmallows, well drained mandarin oranges, and well drained crushed pineapple. Fold gently to combine.
- Cover the bowl with plastic wrap and refrigerate for 2 hours before serving. This allows the mixture to thicken and for the marshmallows to soften.
