I think we live in an age of oblivion. Just look around and all you will see are people with their eyes on their phone or other device. Ear plugs in the ears and totally oblivious of their surroundings. Momma Said, “Get your head out of you’re *$$ and pay attention.” That was one of mom’s favorite sayings.
I was watching the news this week and saw a news story that describes this perfectly. In England a sculpture of two hands clasped in friendship was placed over a sidewalk in the park. It was shaped so you had to walk under the hands in a type of archway. It had to be moved because people were texting as they walked and were walking into the sculpture and hurting themselves. I am sorry, but that is just stupidity at its highest.
It describes our world today to a tee. Everyone is so self involved that the world must make concessions for them. Momma Said, “WAKE UP and see what is going on around you.” There is more to life than checking Facebook and Twitter. This has gotten so out of hand that people have lost the ability to physically talk to each other.
There will come a time when people won’t even need a mouth just two giant thumbs. Communication had become so technical that people have forgotten the act of physically communicating. The trend now is text don’t call. I have friends that will not answer the phone if you call them, it is text or nothing. I miss the good old days more and more.
Orange Chicken
Sauce Ingredients:
1 Cup BBQ Sauce (Sweet Baby Ray’s)
1 Cup Sweet Orange Marmalade (Smucker’s)
2 TBSP Soy Sauce
Crispy Chicken Ingredients:
3-4 Chicken Breasts (We used 3)
1 Cup Flour/1 Cup Cornstarch (You can use both or either/or)
2 Eggs
Oil (We used vegetable oil)
Cooking Directions:
In a sauce pan, add the BBQ sauce, marmalade, and soy sauce. Turn the heat on low and let it simmer for 20 minutes, stirring a few times.
Meanwhile, cut up your chicken breasts into cubes. In one bowl beat 2 eggs, while the other bowl should mix the dry ingredients.
Dip pieces of chicken in the egg and then cover in flour/cornstarch. Set on an extra plate.
Add a thin layer of oil to a frying pan and turn your stove on medium/high heat. Once it sizzles, add the chicken to the pan. Let it cook for 3-5 minutes each side until it’s brown and cooked on the inside.
Set the oily pieces on a paper towel and let drain.
Add the chicken to the sauce and toss!
Eat it on top of white rice and enjoy. I think veggies would be good with it such as green peppers or broccoli.
