This past Monday was the first day of school in the county where I live and the entrance to the High School is across from the road where I live. There is also a grade school at the same location and when I turned onto the four-lane traffic was backed up for almost half a mile. Between parents dropping kids off and kids driving themselves it was a traffic jam for sure.

The school I attended was a twelve-year school incorporating kindergarten through 12th grade. We had no more than 700 kids at any given time. The school was situated on a corner lot and didn’t have much parking. Only an alley was available for parking and that was for teachers and cooks. So, we didn’t have very many kids with there own car. Momma Said, “It took a long time to earn enough money to buy a car in those days.”

My school has since been consolidated with Elkins High and that is where the traffic jam was. They have a parking lot that is bigger than my whole school. Times have changed so much that it is hard to grasp and now the higher powers are wanting to consolidate more schools into this one. I don’t know how they can do it without spending thousands of dollars to enlarge the existing school when the ones that are scattered around are still good.

They are packing the classrooms with so many kids that I don’t see how anyone can get a solid education. It is no wonder the United States is among the lowest in testing scores around the world. The teachers are overwhelmed and don’t have time to pay attention to the students needs. It is hard to pick which option is worse, remote learning or overcrowding. On both counts, the kids are not getting the attention they need to thrive. Momma Said, “Bigger is not always the best option.”

Blackberry Dumplings Recipe

INGREDIENTS

For the Blackberry Syrup

  • 4 cups fresh or frozen blackberries
  • 1 cup sugar
  • 2 cups water
  • 1 tablespoon fresh lemon juice

For the Dumplings

  • 2 cups all-purpose flour
  • 1⁄4 cup sugar
  • 1 1⁄2 teaspoons baking powder
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon ground nutmeg
  • 3⁄4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract

INSTRUCTIONS

  • Make the blackberry syrup: Combine the blackberries, sugar, water, and lemon juice in a large pot or Dutch oven. Bring the mixture to a boil over medium-high heat, stirring occasionally. Reduce the heat to low and let it simmer while you prepare the dumplings.
  • Make the dumplings: In a large bowl, whisk the flour, sugar, baking powder, salt, and nutmeg.
  • In a separate bowl, whisk together the milk, egg, and vanilla. Pour the wet ingredients into the dry ingredients. Mix with a spoon until a soft dough forms.
  • Increase the heat under the blackberries to medium. Drop the dumpling batter by heaping tablespoonfuls into the simmering blackberry mixture. Leave some space between each one.
  • Cover the pot with a lid and let the dumplings simmer for 15 minutes without lifting the lid. The dumplings will puff up and cook through.
  • After 15 minutes, remove the lid. If desired, gently flip the dumplings over with a spoon to coat the other side in the syrup. Let simmer uncovered for 5 more minutes to help reduce the syrup.
  • Serve the blackberry dumplings warm in bowls with plenty of the syrup spooned over top.
