The weather is changing so quickly and I still have soooo much to do before it gets really bad. I will have the second coat of paint on my deck this weekend and I still have 101 other things to do. I got some of my landscaping done, cutting back some trees and flowers. Momma Said, “If I pace myself I should be done about December.”

My brother is going to have surgery on his shoulder, so I will need to go do some cleaning (YUCK) for him. I do not like to do inside chores. That is always my, put off until the snow is blowing, kind of job. I will be sure to take some old newspapers with me for cleaning the windows. Momma Said, “They work great and do not leave streaks.”

I am going to be making more salsa this weekend. That is an evening job I can do after I get some things done outside. Besides, it is calling for some rain this weekend, so if that occurs, it will be easier for me to stay inside. This batch is going to the brother-in-law and he wants it HOT. So I think it will be smokin’ when I get done. Momma Said, “Have the volunteer fire department on standby!” If he wants hot, I can give him hot. I think I will name this batch, “Terminator”.

I know by the time I get done, my sinuses will be clean and the tear ducts will get a good workout too. I just don’t want to be around him after he eats this. You know the old saying, “What goes in, must come out.” Good luck with that.

I think this week I will leave you with a recipe that I hope you enjoy. To me, it looks like comfort food, something to have on a chilly fall evening. And you can fix it all in one skillet.

 

UNSTUFFED CABBAGE ROLLS

 

A great recipe to increase your energy levels! Healthy, too!

 

Ingredients:

 

1 1/2 to 2 pounds lean ground beef

1 tablespoon extra virgin olive oil

1 large onion, chopped

1 clove garlic, minced

1 small cabbage, chopped

2 cans (14.5 ounces each) low sodium diced tomatoes

1 can (8 ounces) tomato sauce

1/2 cup water

1 teaspoon ground black pepper

1 teaspoon sea salt

 

Directions:

 

In a large skillet, heat olive oil over medium heat. Add the ground beef and onion and cook, stirring, until ground beef is no longer pink and onion is tender.

Add the garlic and continue cooking for 1 minute.

Add the chopped cabbage, tomatoes, tomato sauce, pepper, and salt. Bring to a boil. Cover and simmer for 20 to 30 minutes, or until cabbage is tender.
