Christmas is just around the corner and I hope you are up to date on your shopping. It sure is looking a lot like Christmas around here. I also see that the north, out mid-west and up east are getting hammered. It sure will be a white Christmas for them, whether they wanted it or not.
The south is not getting away without getting hit as well with some laces getting down into the 20’s. Momma Said, “Just look out for the frozen iguanas falling on your head.” I hear they are good to eat, so maybe it would be cheaper to get a couple of those instead of those expensive turkeys. Momma Said, “It all tastes like chicken anyway.”
Just remember to put those bad boys in a pot of water first because when they warm up, they come back to life, Zombie Iguanas, who would have guessed. Something needs to be done to quell their numbers because they are taking over in the south like the pythons.
That would be an unusual Christmas dinner, instead of turkey, ham or duck you have snake, lizard and alligator. YUM-YUM. I did taste alligator last year and it wasn’t too bad. Put enough batter on it and deep fry it everything tastes like chicken so why not. I think I will leave you with a recipe that is just a little more normal. Get ready to have a very Merry Christmas.
Ooey Gooey Butter Cake
Ingredients
• 1 (18 1/4 oz) package yellow cake mix
• 1 egg
• 16 tablespoons melted butter, divided
• 1 (8 oz) package softened cream cheese
• 2 eggs
• 1 teaspoon vanilla
• 1 (16 oz) box powdered sugar
Instructions
• Preheat the oven to 350 degrees Fahrenheit and grease a 9×13-inch baking dish.
• In a large mixing bowl, blend one egg with the cake mix and 8 tablespoons of butter. Spread into the greased baking dish.
• In a separate bowl, beat the cream cheese until smooth. Add in the remaining two eggs, vanilla, and butter until well combined, then blend in the powdered sugar. Pour this over the crust and spread evenly.
• Bake for 40-50 minutes, until the edges look set and the center is soft.
• Let cool for a few minutes, then serve and enjoy!
