The prices of gas are just really doing a number on my brain. I don’t understand how you can have five gas stations and all of them have a difference price. And not just a price that is reasonable it is up to forty five cents difference just across the street from each other. And the thing that really baffles me is there are people buying gas at the higher price. Momma Said, Be like the chicken, cross the road and save some money.” Maybe I just answered that age old question, “Why did the chicken cross the road?”
Prices of gas always sky rocket during a holiday weekend but that difference is crazy. All the gas probably comes from the same place anyway so why not regulate the price. The sad part for us is to find out what kind of profits the big gas companies are making per month. We keep shelling money out and they keep raking it in.
In 1970 gas was .36 cents a gallon, in 1975 it jumped to .57 cents a gallon, 1985 saw a jump to $1.12, it went up to $2.30 in 2005 and now we stand at $3.65 in our area. According to Google the inflation rate means that $3.65 today would equate to $28.30 in 1970. The dollar had an average inflation rate of 3.94% per year between 1970 and today, producing a cumulative price increase of 675.36%. Momma Said, “Just wrap your brain around that for a minute.”
It makes my head hurt just thinking about this. I can’t fathom how we can afford to live with the price of everything today. I feel as if I don’t work to live, I live to work and still can’t get ahead. How people with a large family are making ends meet is a mystery to me. Both parents working and just barely keeping their heads above water is not a life it is a struggle.
Apple Pie Enchiladas
Incredibly easy to make and are Out Of This World Good!
Ingredients:
1 (21 ounce) can apple pie filling
1 teaspoon ground cinnamon
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup water
1 teaspoon vanilla
6 (8 inch) flour tortillas – store bought is great for this, Just be sure to buy Flour Tortillas
Directions:
- Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla. Sprinkle with cinnamon and roll up, tucking in edges; and place seam side down in prepared dish.
- In a medium saucepan over medium heat, combine butter, white sugar, brown sugar and water. Bring to a boil, stirring constantly; reduce heat and simmer 3 minutes, remove from heat and stir in 1 teaspoon vanilla.
- Pour sauce over enchiladas and let stand 45 minutes.
Note: Don’t rush the 45 minute resting time for the sauce on the enchiladas before baking, this step helps to magically transform the flour tortillas into a faux pasty dough.
- Bake in preheated oven at 350 degrees F for 30 minutes, or until golden.
