Momma Said – May 27, 2015

Families are such a complicated organism. Sometimes it works as a well oiled unit and others it is split into so many different entities that it is hard to see it ever coming back together. You see so many young people going down the wrong path and you feel you have to try and help. They are so young and think they know everything, (I remember it well).

You want to make them see that they are headed for a world of hurt, but they think you don’t know what you are talking about; that you are too old to know what they are going through. Momma Said, “Been there, done that” but they just won’t listen. Why can’t they see that maybe someone else has walked in those shoes before and you are just trying to help them? Do they listen? NOOOOOO!

I can see that they are just floating in a void and feel nobody will listen. There is always someone that will listen if they just took the time to talk. Momma Said, “There is not a situation out there that someone has not gone through before.” It is always easier to blame the problem on someone else than it is to stand up and take account of your own actions.

The main problem with young people these days is that they had no structure in their upbringing. No sense of purpose you might say. If they didn’t want to do something, they just didn’t do it. They were not held accountable for their actions and they had no respect for authority. When you don’t respect your parents, you don’t respect anything or anyone, not even yourself.

I send out a special prayer to members of my family that are going through an especially rough time and hope they can come through the other side unscathed. I wish they would lift their eyes to the heavens and ask for the help they so desperately need before it is too late. Take the time to sit down and talk with your children, show them that they can talk to you about any problems they may be having.

I am in such turmoil about a recipe that I will just leave you with one that seems to me to be comfort food. I hope you enjoy.

 

Chicken-n-Biscuits

Ingredients

· 1 medium onion, chopped

· 2 teaspoons canola oil

· 1/4 cup all-purpose flour

· 1/2 teaspoon dried basil

· 1/2 teaspoon dried thyme

· 1/4 teaspoon pepper

· 2-1/2 cups fat-free milk

· 1 tablespoon Worcestershire sauce

· 1 package (16 ounces) frozen mixed vegetables

· 2 cups cubed cooked chicken

· 2 tablespoons grated Parmesan cheese

 

BISCUITS:

· 1 cup all-purpose flour

· 1 tablespoon sugar

· 1-1/2 teaspoons baking powder

· 1/4 teaspoon salt

· 1/3 cup fat-free milk

· 3 tablespoons canola oil

· 1 tablespoon minced fresh parsley

Directions

1. In a large saucepan, saute onion in oil until tender. Stir in the flour, basil, thyme and pepper until blended. Gradually stir in milk and Worcestershire sauce until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the vegetables, chicken and cheese; reduce heat to low.

2. Meanwhile, in a large bowl, combine the flour, sugar, baking powder and salt. In a small bowl, combine the milk, oil and parsley; stir into dry ingredients just until combined.

3. Transfer hot chicken mixture to a greased 2-1/2-qt. baking dish. Drop biscuit batter by rounded tablespoonfuls onto chicken mixture.

4. Bake, uncovered, at 375° for 30-40 minutes or until biscuits are lightly browned. Yield: 8 servings.
