This time of year is a time of rejuvenation. Everything is coming to life, new baby animals in the fields, flowers, bushes and trees blooming profusely. Momma Said, “Wakey, wakey, it is time to get up.” Start moving and start losing that winter weight that seems to have creeped up on us. I hate to say, but this winter was hard on me.
It will soon be time to start the garden, so that will help shed a few pounds. The yard work has already begun, but I have noticed it is a little harder to bend over with 20 extra pounds in my middle. Oops, did I say that out loud? Aughhh! Actually, that is the sound I make every time I try to bend over.
I have never had a problem with my weight before, but I am having some stomach troubles and I think that might have attributed a little to the weight gain. Momma Said, “Maybe the chips and dip have had a little to do with it, too.” I look at it this way I am getting my vegetables (potatoes) in the chips and dairy (cream cheese) from the dip so how could that be so bad for me?
I guess we are only human and whatever we do is in essence bad for us. So I guess we do the best we can and try to make it through life. I hope I can muddle through as long as I can and enjoy the little things that God sends my way everyday.
I have tried this recipe and it is so easy and SOOO good. I hope you enjoy this. And by the way, I think this had a little to do with my muffin middle.
Caramel Apple Dump Cake
Ingredients
· 1 box of Butter Pecan Cake Mix
· 2 cans Apple Pie Filling (about 4 – 5 cups)
· ½ cup caramel sauce
· ½ tsp cinnamon
· ¼ tsp nutmeg
· ⅛ tsp allspice
· ¾ to 1 cup butter
· 1 cup pecan halves
Instructions
1. Spread the pie filling on the bottom of a 9×13 pan. Drizzle caramel sauce evenly over top.
2. In a small bowl, mix together the spices. Sprinkle over top of the caramel apple mixture.
3. Sprinkle the cake mix evenly over top of the caramel apple mixture.
4. Cut butter into thin squares and place evenly over top the cake mix. Make sure to not leave any large gaps.
5. Top with pecan halves.
6. Bake in a preheated 350F oven for 50 minutes or until cake topping is golden brown.
7. Served with whipped cream or ice cream. Tastes delicious hot or cold.
