Sometimes I look at my life and wonder where I am going. I can’t keep my mind on any one thing for very long anymore. I haven’t worked on my craft projects this whole year. It has either been too hot or too wet this summer to get anything done. I am so tired when I get home from work I don’t want to do anything. Every time I go home and just fall into the recliner, I think to myself, “This is not something Mom would do.”
I miss the energy I used to have and between the hot flashes and the mood swings I don’t even feel like myself anymore. I don’t get enough sleep, I don’t eat like I should and my body is slowly falling apart. When you are young, you feel invincible. Momma Said, “You are as young as you feel and right now I feel like I am about 100 years old.”
I am having so much trouble with my lower back that it is restricting me from doing so many things. I saw Gran age over the years and watched as she slowed down. I never got that opportunity with Mom. She passed when she was just 67 years old. I could never picture her in my mind as an old person and I just wonder how she would have aged. She was so active and I never could see her slowing down.
I missed so much with her passing at such a young age. I think a lot of wisdom was wasted with her passing. I would have liked to have been able to sit with her and just talk about life. That is if I could have gotten her to slow down long enough to sit and talk. She would be 85 years old this year and I just wonder if she would still be putting the pink sponge rollers in her hair to curl it.
It is hard to see your parent age but it is even harder to not get the chance to see it.
Bacon Wrapped Cream Cheese Stuffed Chicken Breast
Ingredients
- 1 lb. Boneless skinless chicken breast cut into 4 – 4 ounce pieces
- 4 tablespoons cream cheese
- ¼ cup Pepperjack cheese, shredded
- 2 tablespoons green onion, chopped
- 4 to 8 pieces of bacon
Instructions
- Cut chicken into 4 equal size pieces. Pound breast so it is about ¼” thick.
- Mix together softened cream cheese, chopped green onions and shredded pepperjack cheese. Put ¼ of this mixture into the middle of each piece of chicken.
- Starting at the long side, roll chicken breast up, keeping the cheese mixture to the middle.
- Wrap 1 to 2 slices of bacon around the chicken breast, secure with toothpick, if needed.
- Place on baking sheet (with an edge on it) or a baking dish and bake for 30 minutes at 375 degrees F.
- Broil topside for about 5 minutes to fully brown and crisp bacon. Turn each breast over and broil for another 3 minutes or so to crisp up the bottom side.
- Serve immediately.
