The very last work day of the month and finally we got some sunshine. I am so sick of rain and mud I just wish it would dry up for a little while.
As you can guess with the yard being so wet what the dog has been up to. She has this new thing to create more mud. She is digging up the grass, not digging holes just tearing up the grass. It looks like a turf machine has gone through the back and dug up all the sod.
I don’t know what her purpose is. If I had the money I would install a camera just to watch why she is doing this. I don’t have moles so I don’t know what the motivation is. Momma Said, “I guess she has a reason, I just can’t figure it out.” She is one complicated piece of work. I scold her but when she comes up and sits there with “That Look” on her face, what do you do?
I sit here and complain about the rain and mud but as I do, my heart and prayers go out to all those in the path of floods in the south. I wish I could wave a magic wand and make all the bad stuff disappear but I can’t. We as a nation need to keep the hard hit areas in our thoughts and give thanks to all the First Responders and volunteers who put themselves in harms way to help others.
I know there are a lot of volunteer groups in that same area trying to help the animals too. There will be so many displaced that they may never be reunited with their owners. I would hope for a happy ending and everyone gets to be together again. If not, just remember all the animals that will be sent to shelters that will need a forever home.
Chocolate Chip Slice Recipe
Ingredients
o 5oz Butter, Cubed And At Room Temperature
o ½ Cup Sugar
o ½ Cup Firmly Packed Brown Sugar
o 2 Eggs, At Room Temperature
o ¾ Cup Plain Flour
o ½ Cup Self-Raising Flour
o 8.8oz Dark/Milk/White Chocolate Chips
Instructions
Preheat oven to 180˚C (350F) /160˚C (320F) fan-forced. Line a slab pan with non-stick baking paper, ensuring there is a little overhang over both sides.
Cream the butter and sugars until pale and creamy. Add the eggs and beat until combined.
Sift the flours into butter mixture, add chocolate chips and stir until well combined.
Spoon the mixture into the lined pan and use the back of a spoon to spread evenly. Bake for 25- 30 minutes or until firm to touch.
Remove from oven and set aside to cool in the pan.
Cut into squares.
