I was sitting here with little on my mind when I decided I would go through the alphabet and try to name all the states of the union. We used to do things like that in school and I remember being so proud when I got all of them right. Now, not so much, I didn’t write them down as I was reciting them but I only missed a few, remembering them after I got to XYZ.
I could name all the counties in the state plus the county seat of each and all the states and capitals. Now I forget what I am going for in the next room. I try to do memory exercises to keep me sharp. Momma Said, “You snooze, you lose.” I find I am forgetting names and how to phrase sentences and I hope that is not the beginning of the end.
Gran was as sharp as a tack until the day she died and I want to be like that. She could remember phone numbers of everyone in the family and sometimes I have a hard time remembering my own. She was a spry old bird and it was hard to watch her go downhill in her walking. If it weren’t for her mobility you would not have known she was 97 years old. Momma Said, “Good genes run in the family.” (for the most part, ha-ha).
I want to be like the Energizer Bunny and just keep going and going for as long as I can. I don’t think I have hit the million mile mark yet, but I have walked a few thousand so far, I am sure. My feet get tired from walking so much but Momma Said, “Don’t complain until you have walked in someone else’s shoes.”
Iron Skillet Peach Cobbler
Ingredients
1 ready made pie crust
5 med-large peaches
3 Tbsp sugar
1 Tbsp lemon juice
1 c oats
3/4 c all-purpose flour
3/4 c brown sugar
1/2 c butter, melted
Directions
- Use a large iron skillet (I used a 12-inch but you can use a 9). Place pie crust in the bottom of pan. It will extend up the sides.
- Bake until golden brown at 400 degree for 15-20 minutes.
- Meanwhile skin and slice peaches, add the sugar and lemon juice and mix. Pour peaches over the cooked crust.
- Combine oats, flour, brown sugar and melted butter into a small bowl mix until blended.
Crumble this over the top of peaches. - Bake at 375 degree for 20 minutes.
- Note: Skillet is going to be hot when you take the crust out of the oven, make sure your peaches and the topping are ready to go so you can throw it back into the oven to finish it.
