Momma Said

It is hard to believe that it is just four short weeks until Christmas. Time has a way of escaping me and I just can’t fathom that another year will be rolling away shortly. I have always heard that the older you get, the faster times goes by. I didn’t believe that until recently. Momma Said, “Time and tides are controlled by no man.”

We are so wrapped up in our daily lives that sometimes we forget to live. If we can’t find something to be passionate about we lose a little of ourselves each day. We need to feed our mind and soul as well as our body. I think Mom’s passion was bowling, she didn’t miss a single league day and she loved to go different places during the tournaments. I went to Louisiana once with her and had a blast.

She went to Las Vegas, Florida, Utah and more places than I remember. That was one way she could see the country. She never sat still on her trips she would come back with hundreds of pictures. At that time it was rolls of film that had to be developed. Old school stuff, but innovative at the time. Momma Said, “Work with what you have.”

She was gone before her time and I wish she could have had more time to enjoy the things that made her happy. She missed seeing her grandchildren and great-grandchildren grow up and that makes me so sad. She would have loved to have them all around her. It is good to see them grow into independent young people and I think she would have been proud to see another generation come into their own.

Crazy Chocolate Cake

– 1-½ cup all-purpose flour
– 3 tablespoons cocoa powder
– 1 cup granulated sugar
– 1 teaspoon baking soda
– ½ teaspoon salt
– 1 teaspoon white vinegar
– 1 teaspoon pure vanilla extract
– 5 tablespoons vegetable oil
– 1 cup water

Directions
1. Preheat the oven to 350 degrees. Grease an 8-inch square or 9-inch round cake pan.
2. Add all the dry ingredients directly to the pan and mix.
3. Make 3 depressions – 2 small and 1 large – in the mixed dry ingredients. Pour the vinegar in one of the small depressions, the vanilla in the other small depression, and the vegetable oil in the large depression. Pour water over all, and mix with a fork until smooth.
4. Bake on the middle rack of the oven for 35 minutes, until an inserted toothpick comes out clean.
5. Allow to cool. Top with your favorite frosting and enjoy!
