I have had a horrible week thanks to technology. I came to work on Wednesday and my computer had blown up. Everything gone in the blink of an eye. The poor thing should have gone to computer heaven years ago. I have worked with this one for so long that t I won’t know what to do with an updated one. Momma Said, “Go with the flow, adapt, overcome, improvise.”
My article will be short and sweet this week because I am typing on my Kindle and that is not going so well. I do know where the delete button is though, many, many mistakes. I have said that technology will be the death of us all and I am dying a slow death right now. I have words popping up that I am not even typing. I think this thing is possessed, God help me!!!
I just cannot wrap my brain around this stuff. I don’t understand the terminology and I get so confused then my brain just short circuits. I can hear people explaining but it just does not compute, pun intended. Momma Said “I really, really miss the good ole days.”
Grilled Huli Huli Chicken
4 pounds boneless skinless chicken thighs or breasts
1 cup unsweetened pineapple juice
1/2 cup soy sauce
1/2 cup Brown sugar
1/3 cup ketchup
1/4 cup CHICKEN broth
2 teaspoons fresh ginger root, grated
1 1/2 teaspoons minced garlic
Green onions, sliced for garnish
1. In a medium bowl, whisk together pineapple juice, soy sauce, Brown
sugar, ketchup, chimes I chicken broth, ginger and garlic. Reserve 1 cup
for basting. Add the chicken and sauce to a Ziploc bag and marinate at
least 3 hours or overnight.
2. Grill chicken, covered for medium hat for 6-8 minutes on can side or until no longer pink. Baste occasionally with reserved marinade during the last 5 minutes. Garnish with green onion if desired And serve with GRILLED pineapple.
