Oh No, it’s Armageddon!!! I see the cardboard tube in the toilet paper roll. The end of the world can’t be far away. Let me ask you this, what did people do before the invention of toilet paper? Do you think people today could revert back to that? Momma Said, “I could just imagine what people would give up before they gave up toilet paper.”
Stop and think of just that small privilege we have. What else in our lives do we take advantage of? We have instant hot water, heat, shelter, readily available food, cell phones and transportation. Just think of our ancestors traveling across this country in covered wagons. A trip that took months instead of days and mail service that arrived by pony express, if it arrived at all.
We are a spoiled society that takes too much for granted. We see that now every time we go to the store. When this virus first originated people were hoarding everything. Now the health professionals can’t get the supplies they need when they are putting their lives on the line to help people.
I think we are in for a whole new way of life. Hand shaking will be a thing of the past and the sad part of it is when this passes, and it will, people will forget all too quickly. It is already forecasted that this virus will probably be around now forever. If we are lucky enough for scientists to create a vaccine I am afraid the next time it hits it will mutate and the vaccine will not be helpful. I pray everyone stays safe.
Bacon Wrapped Cream Cheese Stuffed Chicken Breast
Ingredients
- 1 lb. Boneless skinless chicken breast cut into 4 – 4-ounce pieces
- 4 tablespoons cream cheese
- 1/4 cup Pepper jack cheese, shredded
- 2 tablespoons green onion, chopped
- 4 to 8 pieces of bacon
Instructions
- Cut chicken into 4 equal size pieces. Pound breast so it is about 1/4″ thick.
- Mix together softened cream cheese, chopped green onion, and pepper jack cheese. Put 1/4 of this mixture into the middle of each piece of chicken.
- Starting at the long side, roll chicken breast up, keeping the cheese mixture to the middle.
- Wrap 1 to 2 slices of bacon around the chicken breast, secure with a toothpick, if needed.
- Place on baking sheet (with an edge on it) or a baking dish and bake for 30 minutes at 375 degrees F.
- Broil topside for about 5 minutes to fully brown and crisp bacon. Turn each breast over and broil for another 3 minutes or so to crisp up the bottom side.
- Serve immediately.
Notes
- One piece of bacon wrapped around each breast is enough. But 2 pieces of bacon for each breast fully wraps the chicken and is outstanding as well.
- 1 lb. of chicken usually equals one large chicken breast cut in half. Cut each half in half again and you will have four 4 ounce pieces.
- This recipe is very adaptable to being basted with your favorite grilling sauce, marinade, chili sauce, or sweet and sour sauce during baking.
