When Mom was still with us, this would be a very busy time of year for her. She would be canning everything she could get her hands on. That old pressure cooker would be going non-stop. Green beans, tomato juice, peaches, corn, pickles and the blackberries would already have been done. She would be putting the 105th coat of paint on the house. I think at the time she passed the only thing holding that house together was the layers of paint. Every year it got a new coat whether it needed it or not.
She could get more done in a few hours than most people could in a few days. She definitely managed her time right down to the last second. Momma Said, “If it needs to be done, just do it.” I think of her a lot when I am doing a project around my house. The hard thing is I still think of picking up the phone and asking her a question. It really leaves a big hole in my soul to know I will never be able to talk to her again.
I think losing someone never really gets any easier. It is easier to bear after a period of time but the total loss of someone just never sinks in. It really took a toll on Gran when she lost two of her three daughters. Burying your children is something no parent should ever have to go through and she had to do it twice. She was a very strong woman but that just seemed to deflate her.
In this time of uncertainty do not take your family for granted. Momma Said, “You may be separated by distance but that should never distance your heart.” Keep in touch with your family and friends and let them know they are loved. Social distancing should never come between you and the ones you love.
THE BEST CROCKPOT BBQ CHICKEN
Ingredients
- 2 lbs. boneless skinless chicken breasts
- 1 cup BBQ sauce
- 1/4 cup Italian dressing
- 1/4 cup brown sugar
- 1 Tbsp. Worcestershire sauce
- salt to taste
Instructions
- Season chicken breast lightly with some sea salt and place in your crockpot.
- In a mixing bowl combine BBQ sauce, Italian dressing, brown sugar and Worcestershire sauce. Stir until well combined.
- Pour over chicken, cover and cook on HIGH for 3-4 hours
- Once time is up, you can serve the breast whole, or shred with 2 forks. If shredding, cover and let cook in sauce for about 10-15 minutes to soak up all of that delicious flavor.
- Serve on buns with coleslaw, over rice, in wraps or on a salad.
