Other than killing a baby opossum and destroying one of her toys, all has been quiet so far on the home front.  I don’t know where or when she (the dog) committed murder but the body was lying on the back porch when I let them out for their morning constitution.  At least she didn’t try to eat it.  YUCK would be the word of the day if that happened.

Bow hunting season is open in West Virginia and it has been superb weather for it.  Still a lot of leaves on the trees so Squirrel hunting is a little hard but still a lot of cover for the deer hunters.  I miss the good naps I used to have in my tree stand, the best sleep I ever had.  Momma Said, “Thank heavens for the safety harness though!”

I did go to sleep and fall out of my stand once, woke up hanging just below my stand with my bow still in my hand.  Climbed back up and finished the day with another nap.  It is funny how nature can just drain the stress from you like a magnet.  The excitement of getting dressed and ready, into your tree stand before daylight and the anticipation of that big buck walking out into the morning sun. 

If you have never hunted you can’t imagine the thrill of the sun coming up over the tops of the trees, the birds starting to sing and the fog burning off as the deer start to walk out of the woods.  It is a magical sight to behold.  Sometimes you just sit there and watch the squirrels play with each other or some other surprise visitor like a strutting tom turkey and a fox goes trotting by.  Momma Said, “It is not the thrill of the hunt but the anticipation of what you are going to see.”  Hunting is not all about the killing you can still go home empty handed and be happy.

No Bake Bacon Mac and Cheese

Ingredients

·         One cup of macaroni noodles

·         4 tablespoons of unsalted butter

·         1/4 cup of flour

·         1 1/2 cup of milk

·         1 1/2 cup of cheddar cheese

·         3 strips of cooked chopped bacon

·         salt and pepper, seasoning

·         green onions for garnish

Instructions

Boil a cup of macaroni noodles in salted water for 9 minutes until al dente’.

After 9 minutes, remove pasta from pan. Drain and set aside.

Add 4 tablespoons of unsalted butter to a preheated pan.

Add 1/4 cup of flour until a base is formed.

Add 1 1/2 cup of milk to pan. Start with 3/4 cup, adding gradually and then the further 3/4 cup over a low heat.

Stir until you have a nice, creamy consistency.

Add a cup and a half of cheddar cheese and 3 strips of pre-cooked chopped up bacon. Season with salt and pepper and mix until smooth and creamy and well combined.

Add pasta back into the mixture and combine until all ingredients are nicely coated.  Use chopped green onions for garnish.
