Two more additions to the Jeep, I got the rear wiper motor replaced and the front park light finally went together. I just keep finding things to do to it. I still haven’t figured out the air conditioning leaking inside. It really puzzles me because the garage couldn’t even find the drain. Momma Said, “Persistence pays off and I will keep searching until I figure it out.”
I heard on the news that Moderna in Japan has now found over 1.63 million doses of vaccine have been contaminated with small particles of a metallic substance. I just wonder how many went out that were not caught. It is scary that people are trying to stay healthy by getting the vaccine but you don’t really know what is in it. I am sure getting injected with small metallic particles is not very healthy.
I do hope that this virus is contained soon but I just don’t see it happening. New cases are increasing daily and with the new variant, children are more susceptible and the spread is even faster with school starting. I don’t really see an end in sight.
And on top of everything else happening, our troops are being killed by suicide bombers at the airport where they are trying to get everyone evacuated in Kabul. It really hurts my heart seeing people hate each other so much that they are willingly blowing themselves up just to kill other people. Momma Said, “Mars is looking better every day!”
Best Salted Caramel Fudge
Ingredients
1⁄2 cup butter
14 ounces sweetened condensed milk
1 cup packed dark brown sugar
2 tablespoons light corn syrup
1 cup white baking chips
1⁄2 teaspoon coarse sea salt
Directions
Line 8” square baking pan with foil or parchment paper; coat with cooking spray. Melt butter in medium saucepan over medium-low heat. Stir in sweetened condensed milk, brown sugar and corn syrup. Cook over medium heat until sugar is melted and mixture comes to a simmer, stirring frequently. Reduce heat to low. Simmer 10 minutes, stirring constantly until mixture begins to thicken (you will begin to slightly see the bottom of the pan while stirring).
Remove from heat; let stand 30 seconds or until bubbles stop. Stir in baking chips; let stand 2 minutes. Stir until melted and smooth. Pour and spread into baking pan; sprinkle with salt. Refrigerate 2 hours or until firm.
