How do producers of TV shows expect us to watch their productions and not get irritated? How do they expect us to believe that people are traveling down the highway at excess speeds and the star turns to the passenger and carries on a conversation and not look where they are going? Taking your eyes off the road for a split second is dangerous and they carry on full conversations. Momma Said, “Keep your eyes on the prize.”
I get so mad I scream at the TV to look where you are going, but do they listen, NOOOOOOOOOOOOOOOOO. In West Virginia you try doing that and you will find yourself over the embankment, through the weeds, in the woods and possibly end up in a creek. No way would that happen here. Just come to WV you crazy producers and try that. I know it is all staged but it still gets my dander up.
I think this sends a bad message to young drivers, as they are sometimes distracted enough. It is sometimes hard for me to remember what I do from one day to the next but I can still remember learning to drive. It was in a standard transmission VW Bug. I loved that little car, it got great gas mileage but it went through oil like crazy.
Learning to drive in a standard transmission vehicle gave me the advantage to drive just about anything. You have to learn to listen to the engine so you know when to shift. That gave me the courage to drive a farm tractor, a farm truck or even a semi-truck. Yes folks this ole girl can do that. Momma Said, “Never limit yourself, reach for the stars and you can do anything.”
Healthy Avocado Brownies
Ingredients
- 2 Ripe Avocados
- ¾ Cup Coconut Sugar
- 2 Teaspoons Vanilla
- 6 Ounces Dark Chocolate Chips
- 2 Eggs
- ½ Cup Cocoa Powder
- ½ Cup Almond Flour
- Pinch of Salt

- ¼ Cup Coconut Oil
- 1/3 Cup Maple Syrup
- 3 Ounces Dark Chocolate Chips
- 1/3 Cup Cocoa Powder
- Pinch of Salt
- Walnuts for Topping
Healthy Avocado Brownies
Instructions
In a blender or food processor, blend avocados until no lumps remain. Add coconut sugar and vanilla, blend again until creamy. About 4 minutes.
In a separate bowl, melt dark chocolate in the microwave at 30-second increments, stirring after each increment.
Pour melted chocolate into the processor and blend until smooth. You may need to scrape the sides of the processor with a spatula to mix thoroughly.
Add eggs and blend again just until combined.
Add cocoa powder and almond flour. Blend JUST until combined.
DO NOT over-mix. Be sure to scrape down the sides of the processor.
Pour batter into a 9×9 inch baking dish lined with parchment paper. Spread the batter out evenly.
Bake in a 350°F oven for 25-30 minutes or until just set. Overbaking will result in cakey brownies.
Allow brownies to cool completely.
Healthy Avocado Brownies Frosting
In a small saucepan over medium-low heat, melt coconut oil, maple syrup, and dark chocolate together.
Whisk until combined and smooth. Add a pinch of salt and cocoa powder. Whisk until smooth. Drizzle over cooled brownies.
Work with the frosting quickly because the coconut oil will start to harden. Top with walnuts and enjoy!
