“It’s not the time you put into your work, but the work you put into your time.” I think that is a very substantial quote. I think of mom and how much she could accomplish in a very short amount of time. She was what I call a time manager and she was really good at it. She could get more done in half a day than most people could do in two days. I try but sometimes it doesn’t go the way I want it to.
I have a number of projects on the “to do” list for this fall and I hope I can get them accomplished. Momma Said, “Don’t put off until tomorrow what you can do today.” The only problem is, today just isn’t long enough. I have seven jobs on the list as of right now and I hope I can get motivated to get them all done.
I can’t believe that it is fall already. This year has just flown away with the wind. Maybe it will cool down enough that I can get my outside chores done before the weather changes for the worse, I really hope so. It will be time for Halloween before you know it. We have our big local festival, the annual Forest Festival, coming up in a few weeks and that always seems to signal a change in the weather.
That was always a fun time for us when we were kids. That was one of the few times that we got to come into town. The carnival and the big parades were a highlight for us. All the lights and excitement were a fun time for a kid that didn’t get to see much of “The Big City of Elkins.” In the small town that I grew up in, you could walk from one end to the other in about 20 minutes. I wouldn’t change it for anything. Momma Said, “It was some good times.”
It is time to get busy with the apple harvest and everyone is making applebutter, canning and freezing apples and making cider. There are a few more festivals in the surrounding area that center around apples and it is fun to go to watch the activities. If you are lucky enough to live in an area where you can get some fresh applebutter, cook up some biscuits and spread it on thick.
Apple Pie Taco’s
3-4 apples, sliced (peeling optional)
1/2 cup white sugar
1/2 cup water
2 tsp cinnamon
1/2 tsp nutmeg
4-6 flour tortillas (6 inch size)
vegetable oil (or preferred tortilla frying oil)
1/2 cup cinnamon-sugar mixture
Toppings:
vanilla ice cream
whipped cream
caramel sauce
Mix apples, sugar, cinnamon, nutmeg, and water in a sauce pan. Stir, cover and cook for 10 minutes or until apples are soft. Stir frequently. Heat oil in a skillet on medium heat. Place the tortilla in the oil until browned. Turn over and brown the other side. Remove tortilla from skillet and sprinkle with cinnamon—sugar. Fill taco shells with apples, vanilla ice cream, and top with whipped cream and caramel sauce.
