I want to wish everyone a very Merry Christmas and a Happy New Year. I hope the coming year is good to everyone in every way possible. I wish all of our service men and women and working animals would get to come home and peace would reign throughout the world.
That is a big order and I wish Santa could deliver it. I can always keep my fingers crossed and hope for the best. Maybe Christmas miracles will come true. I send up a prayer for all our military, police, first responders and everyone on the front lines of defense of our country. Momma Said, “God keep you safe and protected in His arms and return you home to your loved ones. May your hearts be filled with peace and joy.”
Remember to give a little of yourself this holiday season. Help one another, volunteer a little of your time, donate to the Red Kettle and always remember to give your heart to God. After all, He is why we celebrate this time of year. I miss Mom and Gran during the holidays even though they are always in my heart I wish I could hug them again.
I will be missing another part of my heart this year. I lost my little dog Abby two days after Thanksgiving. She suddenly got sick and when I took her to the doctor I was informed that she had a swollen spleen and cancer in her lungs. I was with her when she passed and my heart is broken. Bailey, the golden retriever, misses her sister but seems to be getting along okay so far with her cancer.
Again, I hope everyone has a safe and happy Christmas. Momma Said, “Love each other today because you do not know what tomorrow brings.”
Crock Pot Apple Pudding Cake
Ingredients
2 cups all purpose flour
2/3 cup plus 1/4 cup sugar, divided
3 teaspoons baking powder
1 teaspoon salt
1/2 cup butter ,cold
1 cup milk
4 apples, peeled and diced (I used Gala Apples)
1 1/2 cups orange juice
1/2 cup honey
2 Tablespoons butter, melted
1 Teaspoon cinnamon
Instructions
Combine the flour, 2/3 cup sugar, baking powder and salt in a large bowl. Cut the butter into the mixture until you have coarse crumbs.
Stir the milk into the crumbs just until moistened.
Grease the bottom and sides of a 4 or 5 qt crock pot. Spoon the batter into the bottom of the crock pot and spread out evenly. Place the diced apples over the batter evenly.
In a medium size bowl, whisk together the orange juice, honey, melted butter, remaining sugar and cinnamon. Pour over the apples.
Place a clean kitchen towel over the opening of the crock pot, place the lid on. This keeps condensation from the lid from going into the crock pot. Set the crock pot on high and cook 2 to 3 hours until apples are tender.
Serve warm.
