The shortest day of the year is coming up soon and I can’t wait. I do not like the short days of winter, I like the sunshine. We can start adding minutes back to our days very soon. Hooray! Christmas is almost upon us too and I send heartfelt sympathy to all the people in California who have been affected by the fires in their state.
Also to the families affected by the recent shooting in New Mexico. I just don’t know where our country is headed. Momma Said, “The path we are on now is not a good one.” All the upheaval in the government is throwing us into a tailspin. I don’t know what to believe anymore. I feel bad for the shape our country is in right now.
I wish I could wave a magic wand and fix all the bad in the world. It would be wonderful to know that there is peace everywhere. I guess the girls in the beauty pageants that wish for world peace would finally have their wish come true. Momma Said, “If we don’t straighten things out soon we are not going to have a planet to worry about!”
I sit at home with my cats and dogs and the freedom to come and go as I please and I am thankful that I can do these things in a semblance of peace. I wish the rest of the world could have that and be thankful as well. Please pray for our country and the world to stop the violence and needless killing. Momma Said, “I weep for the world.”
Chocolate Crinkle Cookies
YIELD: 2 DOZEN
TOTAL TIME: 3 HOURS
Ingredients:
- 1 & 2/3 cup all purpose flour
- 1/3 cup cocoa powder
- 2 tsp baking powder
- 1/2 tsp salt
- 1 stick butter (1/2 cup)
- 4 oz unsweetened chocolate
- 4 eggs
- 1 & 1/2 cups sugar
- Powdered sugar for rolling the cookies (about 1 cup)
Directions:
- In small mixing bowl, combine the flour, cocoa powder, baking powder and salt. Set aside.
- In a small pot over medium-low heat, melt the butter and unsweetened chocolate. Stir occasionally until melted, remove from heat.
- In a large mixing bowl, combine the eggs and sugar, whisk together. Then add the melted chocolate mixture, whisk again. Gradually add all the flour mixture to the wet mixture, mixing just until combined. Cover the bowl with plastic wrap and refrigerate the dough for at least 2 hours (you can refrigerate it overnight!).
- Preheat the oven to 350ºF. Line a baking sheet with a silicone baking mat or parchment paper. Pour powdered sugar into a bowl (about 1 cup). Using a small cookie scoop, form the dough into balls, then roll each ball in a generous amount of powdered sugar. Place the cookies around 2 inches apart on the prepared baking sheet. Bake for 16-20 minutes and allow the cookies to cool on the pan before removing them since they will be so gooey. Serve and enjoy!
