Momma Said, “Merry Christmas Everyone!” It is that time of year and I hope everyone is finished with the last minute shopping. I am sure there are plenty of people still running around looking for the perfect gift for everyone on their list. I think I am finished, or at least I hope I am. I hope I have been a good girl this year and Santa will be nice to me.
The dogs will be getting nice big bones to chew on and the cats will have new toys. I think they will all like that. I hope everyone out there doesn’t forget their pets at this time of year. Also a good gift you can give is, donate to a local animal shelter under your pet’s name. That way, more than just your pet will benefit from the gift. Momma Said, “Every animal deserves a good life so help when you can.”
As a country we can wish for Peace on Earth and that is one wish I hope comes true. If everyone would look at this beautiful planet and see what we are doing to it, maybe some of this hate and dissention would stop. We are tearing ourselves to pieces as a species and we don’t even realize it. I just don’t understand all the hate that is at our doorstep every day. Why can’t people wake up and see what we are doing to ourselves?
I don’t want to die in a bomb explosion or a nuclear blast but God said that this time the world would be cleansed with fire. Noah made it through the flood but with the weapons of today I don’t think anyone will be safe. Momma Said, “It saddens me to know that people can threaten the existence of an entire planet just because of hate.”
I hope we can all live to a ripe old age and nothing blows us to dust. So on that note, again I wish everyone a very Merry Christmas.
Spinach Balls
- 2 (10 oz.) packages frozen spinach, thawed & well-drained
- 2 small onions, very finely chopped or blitz in food processor
- 2 1/4 c. stuffing with herbs
- 6 eggs, beaten
- 1/2 c. butter, melted
- 1/2 c. Parmesan cheese
- 2 tsp. garlic salt
- 1 tsp. black pepper
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine all your ingredients and shape into walnut-sized balls and place on a baking sheet.
- Bake in preheated oven for 20 minutes, or until heated through and browned
- Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier.
