I want to send congratulations to all our Olympic athletes. I am so proud of all they have accomplished so far. Great job goes out to Shawn White for his third gold in snowboarding. And also new comers Chloe Kim and Red Gerard, great job! Momma Said, “I can’t even walk without falling over myself, I wouldn’t attempt what they do.
I remember one time mom tried skate boarding. My brother was fearless on the thing. We had a long concrete walkway in our front yard and mom decided she would try it. She made it about three feet before her two feet were straight in the air. We thought she was dead. She made it up with a lot of bruises, especially to her ego.
Anyway, back to the Olympics, I have to say, so far, our athletes have conducted themselves with dignity. Momma Said, “They have worked hard for most of their lives to get where they are and I hope they all have a great time.” The women’s hockey team is doing well. They beat Russia 5-0 and are going up against their rivals from Canada next. I wish them well and hope for a gold medal.
I hated the drama created by a few of our athletes in the summer games and hope it never happens again. The world is watching and it makes our country out as a big joke. I don’t like that because I love this country and what it stands for. To me that is not a joking matter. Momma Said, “If you can’t take pride in yourself, then it will not show up in any of your actions.”
Chicken Tortilla Spinach Casserole
Ingredients
1 can cream of chicken soup
1 7oz can chopped green chili peppers
1 8oz cup sour cream
1/2 c milk
2 1/2 c boneless chicken, cooked. (Rotisserie chicken from grocery store works great)
1 medium bell pepper, chopped
1 large tomato, chopped (1 cup)
1 1/2 cup cheddar cheese or mexican cheese blend
2 boxs chopped spinach, thaw & squeeze out water
8 (6 or 7 in) corn tortillas, cut in bite size pieces
Directions
- Preheat oven to 350 degrees
- In large bowl, add cream of chicken soup, sour cream, chopped chiles, milk, green pepper, tomato, corn tortilla’s, salt & pepper, to taste, 1 cup of cheese, and chopped chicken. Stir together and pour half in a 9X13 pan that has been sprayed with cooking spray. Then layer the spinach over the top of the mixture and add remaining mixture on top of the spinach.
- Bake at 350 degrees for 45 to 50 minutes. Take out and top with remaining cheese and put back in the oven until the cheese melts and the casserole is bubbly.
