I think the snow is
a thing of the past, hooray for that.
I am ready for the rebirth of the land. I have seen baby calves and goat kids. They are so cute and I love to watch the kids bounce around. They look like they have springs in their legs.
There is a farm just down the road from where I live and he must have 50 goats. All of them seem to be having twins and I think a few have had triplets. Momma Said, “It is like watching the Disney movie of 101 Dalmations.”
I would like to get out in the middle of them and play a game of tag. If I had them, I would build a tower that they could climb and play on. That would be fun to watch. I could definitely make a day of watching that kind of fun.
I hope everyone had a wonderful Easter with family and friends. I have a lot of fond memories of our family dinners. One year it snowed on Easter Sunday and my brother had just had his first child, a son. We made a snowman and my brother hid behind the body of the snowman and held his son up for the head. He had on sunglasses and a little white hat that made him look just like the snowman. It was soooo cute.
Now his son has children of his own and a new generation can celebrate life. It is good to see the young ones prosper and grow. Momma Said, “That is the meaning of life. Enjoy everyone in your life and every day you have with them.”
Granny’s Old-Fashioned Bread Pudding with Vanilla Sauce
- 4 cups (8 slices) cubed white bread
• 1/2 cup raisins
• 2 cups milk
• 1/4 cup butter
• 1/2 cup sugar
• 2 eggs, slightly beaten
• 1 tablespoon vanilla
• 1/2 teaspoon ground nutmeg
Sauce Ingredients:
• 1/2 cup butter
• 1/2 cup sugar
• 1/2 cup firmly packed brown sugar
• 1/2 cup heavy whipping cream
• 1 tablespoon vanilla
Directions for Pudding:
Heat oven to 350°F. Combine bread and raisins in large bowl. Combine milk and 1/4 cup butter in 1-quart saucepan. Cook over medium heat until butter is melted (4 to 7 minutes). Pour milk mixture over bread; let stand 10 minutes.
Stir in all remaining pudding ingredients. Pour into greased 1 1/2-quart casserole. Bake for 40 to 50 minutes or until set in center.
Directions for Sauce:
Combine all sauce ingredients except vanilla in 1-quart saucepan. Cook over medium heat, stirring occasionally, until mixture thickens and comes to a full boil (5 to 8 minutes). Stir in vanilla.
To serve, spoon warm pudding into individual dessert dishes; serve with sauce. Store refrigerated.
