Why does something as easy as falling asleep have to be so complicated? I wish I could sleep like I did as a child. No worries creeping up on you just as you are about to slip over the edge of oblivion. No feelings of forgetting to do something important or did you get all the bills paid on time.
Everyone is in such a big hurry to grow up, be old enough to drive or buy beer. All you get as you grow older is a sense of time going too fast. You wake up one day and you are old enough to drive and the next thing you know, someone is trying to take your license away because you are driving the wrong direction on the interstate. Momma Said, “Take time to smell the roses.”
I think I have a case of wintertime blues. Too cold to go out and the walls are starting to close in on me. This has been such a weird winter with weather that we should be getting hitting all around us but skipping right over this part of the state. Georgia and Florida are getting hit with weather that should be in our area, then the Northern states getting totally slammed along with the Midwest.
So far this winter has not been so terribly bad except for the cold. I don’t think the ground has totally frozen all season. We get a few days of cold and then a few days of moderate weather that totally screws up everything. We need a good hard freeze to kill some of the bugs that have been eating us out of house and home for the past few years.
I guess spring will come when it is good and ready, but I hope it is soon. There I go again, wishing my life away. Momma Said, “Be happy with the day God gives you and make the best of every one.” Here is a recipe that should keep your taste buds jumping for joy.
Lemon Pudding Cake
· 1 box yellow cake mix
· ½ cup chocolate chips
· 2 cups milk
· 1 ¼ cups cold water
· 2 (3.4 oz) boxes instant lemon pudding mix
Follow directions for cake mix as instructed on box. Stir chocolate chips into batter and pour into a greased 13×9 pan.
In a separate bowl add milk and water, stir in lemon pudding mix; beat with a whisk for 2 minutes.
Pour pudding mixture on top of cake batter; do not mix. Bake in a pre-heated 350 degree oven for 55 minutes.
Go wild and substitute any flavor cake mix or instant pudding to personalize this creation as your own. Substitute chocolate chips with coconut or peanut butter, butterscotch, or toffee chips. Use chocolate cake with peanut butter chips and chocolate pudding. Yum!
