We almost made it through January without a significant snow storm. Notice I said almost. Mother Nature just had to let us know she was still the boss where winter is concerned. The last three days of January just had to be snowy or it wouldn’t be winter. Momma Said, “January in West Virginia is not January without snow.”
Now just to get through February and we are on the downhill slide to spring. It may be the shortest month of the year, but it seems to drag on forever. I have noticed the days are getting longer and that pleases me greatly. Momma Said, “Give me sunshine and warmth.”
It was snowy and overcast on Groundhog Day so I guess we will be having an early spring. That is just fine with me. We have really been spoiled in our area this year with the lack of snow. We can’t get lazy and forget what winter is like because it can still jump up and bite us. Momma Said, “It can really give you a big headache if you aren’t diligent.”
Speaking of headaches, I saw an article the other day on migraines that really caught my attention. I have suffered with headaches my whole life, mom did too. I have tried every medicine on the market with no success. The article had a simple recipe that is supposed to stop the pain almost at the onset. It calls for the juice of one half of a lemon and one teaspoon of Himalayan Crystal Salt dissolved in a cup of warm water. Momma Said, “The next time I am struck down with a headache, this is one recipe I will definitely try.”
This week’s recipe is for something that will make you feel good no matter what the weather is doing, so enjoy!
Cinna-bun Cake in the oven!
Base:
3 cups flour
1/4 teaspoon salt
1 cup sugar
4 teaspoons baking powder
1 1/2 cups milk
2 eggs
2 teaspoons vanilla
1/2 cup butter, melted
Topping:
1 cup butter, softened
1 cup brown sugar
2 tablespoons flour
1 tablespoon cinnamon
Glaze:
2 cups powdered sugar
5 tablespoons milk
1 teaspoon vanilla
Preheat oven to 350F. Prepare a 9 x 13 baking pan (buttered).
Mix all of the base ingredients together, with the exception of the butter. Add the melted butter last, and then pour into your prepared pan,
Mix all of the topping ingredients together in a separate bowl. Mix well. Drop by teaspoonful over the base, as evenly as you can over the entire base. Take a butter knife and swirl the topping into the base. Pop into the oven and bake for 28-30 minutes.
While the cake is baking, prepare the glaze and set aside.
Remove from oven and glaze the cake while still warm.
