This past year has seen ups and downs, good and bad. The loss of my best friend was a tragedy, but she is no longer in pain or suffering. My faith in God lets me know that she is in a much better place and that brings a smile to my face. Momma Said, “We will all get to see our loved ones again.”
The New Year has started off cold, but so far no snow to speak of for us. The weather is so messed up anymore I saw on the news that Las Vegas was to get snow for New Year’s Eve. That will be one mess I want no part of. They don’t even have snow removal equipment.
The ski resorts are having a prosperous start to the year. It has been cold enough that they are making snow and letting the ski bunnies swish and slide. It is much too cold for my taste, but everyone has different ideas of fun. I spent a weekend at Snowshoe Ski Resort and met a young man from Africa who had not seen summer in six years. He traveled from Africa to America because the seasons are opposite. So he would finish winter and skiing in Africa then come here to ski some more.
Winter is not my favorite season, but at least in West Virginia we can experience every type of weather. It never gets boring and the changing of seasons is so beautiful. Momma Said, “We get to have four seasons and enjoying three of the four is not so bad.” They are always unique and a delight.
I have not made a New Year’s resolution because I probably wouldn’t keep it anyway. I hope everyone had a safe beginning to 2015 and the year will be prosperous to all of you. The recipe this week is another sweet but it is so easy to make it will become one of your favorites.
Impossible Pie
Ingredients:
2 cups milk
1 cup shredded coconut
4 eggs
1 teaspoon vanilla extract
1/2 cup all purpose flour
7 Tablespoon butter – Use the butter wrapper to butter the baking dish then lightly flour it
3/4 cup sugar
1/4 teaspoon ground nutmeg
Directions:
Put the milk, coconut, eggs, vanilla, flour, butter and
sugar in bowl and Mix WELL.
Pour into the greased and floured pie dish.
I sprinkled nutmeg and a little extra coconut over the top.
Bake at 350 degrees for 45 minutes or until the top is golden brown
Remove from oven, let it cool down.. Refrigerate till nice and cold.
